Food Review: The Steaks are raised at Skirt’s New Menu at W Singapore – Sentosa Cove

The Place For those who are steak lovers, Skirt restaurant located at W Singapore – Sentosa Cove should be a familiar name. Skirt had a revamp of its menu recently along with its new Head Chef, Justin Dingle-Garciyya, where the restaurant is now trying to reposition itself as an all-rounded cuisine as opposed to its previous steakhouse label. You can still find the signature steaks and cuts on the menu, with a more diverse menu than before.

The Food I tried a wide variety of dishes during my visit, which is a good testimony of the new menu. From the To Taste section of the menu, we started with the Marinated Raw Beef served with Crispy Rice and Chipotle dressing (S$28/lunch menu only). The crunch texture of the rice and slight hints of spiciness of the chipotle sauce resonate well with me.

Up next is the Sri Lankan Crab & Caviar (S$32), a luxe fashion it enjoy the South Asia crab. The shreds of crab meat is then poured over with a delicious shellfish broth.

On to the more sinful bits of the To Taste Menu, the Oven Roast Bone Marrow (S$45) is one sinful treat as it is served along with escargot and Café de Skirt Butter. Likewise, I enjoyed the Veal Sweetbread & Foie Gras (S$38) with mushrooms and Red Wine Jus, especially the fatty bits of the juicy foie gras.


One of the highlights for me on the revamped menu is the Grilled Cape Grim Sirloin, Celeriac Foam, Truffle and Artichoke Caviar (Chef Special). The sirloin has a good balance of meat and fat, grilled to a nice medium-rare for me. The texture of the beef is tender, while the meat is juicy by itself, with its flavours further elevated by the celeriac foam.

To balance the red meat, go for the Grilled Baby Snapper with Preserved Lemon Dressing (S$74), a huge full size fish which is fit for sharing for 3-4 persons.

Other noteworthy sides to have to complement the meats are the Lobster Mac & Cheese (S$19), Duck Fat Potatoes (S$15) and Broccoli Rabe (S$11).


For dessert, I do recommend sharing the Banana, Pistachio Pizza, Vanilla Bean Ice Cream (S$18) as the portion is relatively big. This comes in the shape of a round pizza and I actually enjoyed the simple ice cream itself most.

Rants Located at the edge of Sentosa, Skirt is not the most accessible restaurant to get to without a car. That said, do check the hotel’s website for its shuttle bus service and it may work for your schedule.

Will I Return Again? The charming part (and not so charming) of Skirt is its location at Sentosa Cove, which makes every visit here for me like a temporary respite from the bustling city. The ambience of the restaurant makes it quite ideal for couples or celebratory occasion, and the food should meat expectations.
