Food Review: Haku Sushi At Great World City | Value For Money Japanese Omakase Restaurant From S$68++ Per Person
The Place Located in the basement of Great World City, Haku Sushi is a new Japanese Omakase restaurant where their Omakase menu starts from S$68++, a value for money price point in Singapore’s dining scene. The space of Haku Sushi is decked in wooden furniture and finishings, with counter dining as well as cosy tables for larger groups.
Haku Sushi is located right beside Kou Teppan which offers teppanyaki-style omakase from S$58++. Both restaurants are under the same RE&S Group.




The restaurant is helmed by Chef Yamamoto Yoshiki who brings with him over 35 years of experience from Osaka to Shanghai, and now to Singapore. It offers Kansai-style sushi, characterized by the use of signature sushi-zu (酢し) and lightly pressed sushi rice.

The Food The Kansai style of sushi prioritises the sixth flavour of umami through its combination of vinegared rice, toppings and sauces. Seasonal ingredients are air-flown directly from Osaka where Chef Yoshiki has his own version of wine sushi shari, which marries red wine with a secret blend of elements. A wide variety of Sake is also available where there is also Sake pairing option.

I had the Nishiki Dinner Omakase Menu (S$88++) and here is what to expect:
Chef’s Appetizer (3 Kinds)
A trio of appetisers for a start, I had the Japanese Greens in Dashi; Unagi Shirayaki; and Red Shrimp with Dry Roe.

Seasonal Sashimi (4 Kinds)
I first had a trio of freshly sliced Tai (Sea Bream), Kanpachi (Amberjack) and Akami (Bluefin Tuna).

The Kaki (Japanese Oyster) next is a fresh and plump oyster from Hokkaido.

Chawanmushi
A sizeable portion of Snow Crab Chawanmushi is up next, a silky custard texture with sesame tofu within.

Seasonal Nigiri (3 Kinds)
The nigiris for this part of the meal uses Akazu Shari and my favourite of the lot is definitely the flavourful Chutoro (Medium Fatty Tuna).

Agemono
For the fried course, I had the Snow Crab Cream Croquette on a balsamic tomato sauce. Interesting take on croquette, which is crispy and not too greasy, and goes surprisingly well with the tomato sauce.

Hashiyasume
A light dish is up next where I had a Refreshing Jellied Broth, somewhat akin to a somen jelly since there is somen within the transparent jelly texture.

Tokusen Sushi (3 Kinds)
The sushi courses up next are different from the earlier nigiri as it uses the special red wine Shari.

Handroll
My first time seeing a handroll which features Kanpyo (Gourd Shavings), which has a unique and interesting taste I have never really come across before.

Handroll (Add-on)
This is a special add on to the Omakase available at supplement of S$15++, the Uni & Negitoro handroll is definitely worth the addition since the portion is quite huge and you get a generous serving of Uni.

Soup
A simple and standard soup course before dessert where I had the Asari Clam Red Miso Soup.
Chef’s Dessert
The meal concluded with the Housemade Warabi Mochi with Ice Cream.

Rants We told chef beforehand that one of the panda do not take wasabi but unfortunately, there is still wasabi in the nigiri courses and handroll.
Will I Return Again? For the price, Haku Sushi serves up one of the most competitively priced Omakase menus in Singapore at the moment. Nothing too surprising, but nothing much to complain about for what you are getting at this price point.
