Food Review: Moss Cross Tokyo Singapore At Capri By Fraser China Square | Shokado Omakase With A Contemporary Twist
The Place Tucked away at level two of Capri by Fraser, Moss Cross Tokyo Singapore is a hidden new omakase dining concept from Tokyo, Japan, with a presence in Okinawa as well. The Japanese restaurant is helmed by Executive Chef Akihiro Masuyama where the dining setting is casual and contemporary instead of the conventional counter seating as seen in most Japanese omakase concepts in Singapore.


The Food Only set menus are available for now where the lunch menu starts from S$69++, and dinner menu from S$128++. I had the Wakon-Yosai dinner menu with 7-course (S$150++). You can also opt for 7-flight alcohol pairing for an additional S$90++.
Here is what to expect from the Wakon-Yosai 7-course dinner menu:
Shokado-9
The first course is quite an elaborate affair as it is presented in a wooden box with 9 mini courses. Dishes are subject to change according to the seasons and availability of fresh produce. I had the Tomato Raspberry; Seared Madai Herb Dressing; Chutoro Wasabi Tartar; Koji marinated Chicken Sesame sauce; Carrot Mousse with Hokkaido Crab; Corn Jelly Caviar Yuzu; Octopus from Hokkaido with Mango; Red capsicum with Herb rice sushi; and Roasted Wagyu with Seaweed sauce and Avocado.


Hyogo Oyster with Camembert, Caviar, Konbu
Next up is a plump and huge oyster course where the Hyogo oyster is really creamy. That’s milky broth is a kelp broth paired with camembert mousse, milk foam along with diced raw onions. I also like the burst of yuzu pearls which topped the oyster, and its opulence is completed with the addition of caviar.

Molten Crab Chawan-mushi, Lily Bulb, Bisque Emulsion
This Chawanmushi course is quite different from the usual as it spots a light crab bisque emulsion with clams and shrimps, along with some shredded crab meat and lily bulb.

Hokkaido Tokachi Herb-fed Beef Cutlet, Homemade Worchester Sauce
It is not often I come across beef cutlet in an Omakase and this Tokachi beef cutlet is quite flavourful. The crust is quite good as well, where it is prepared from a breading of parsley and breadcrumbs. Have the beef with the accompanying homemade Worcestershire sauce prepared over three days from grilled whole tomatoes seasoned with soy sauce and bonito flakes.

Roasted Hirame, Almond Flakes, Sake-Beurre Blanc, Herb Oil
This course features Japanese flatfish which rests atop blanched spinach immersed in a white sake cream sauce, along with a drizzle of parsley oil. I find it overly creamy for me, where the cream sauce masks the taste of the fish. I do enjoy the crunchy sliced almonds atop the fish though.

Kyoto Wagyu Sushi, Sea Urchin, Truffle Soy Sauce; Tsugani (Crab) Miso Soup
The last savoury course is a sushi course where the rice is marinated overnight with red wine. The Kyoto Wagyu then sits atop the sushi rice, topped with sea urchin and a dab of truffle soy sauce. There is also the addition of Middle Eastern spices including cumin to the sushi, though it is quite mild.

Crab miso soup using crabs from Kochi prefecture is also served which is quite sweet and comforting to have.

Daikon Compote Tiramisu, Mikan
For dessert, it is quite an interesting combination of daikon, tiramisu and mikan. A layer of mascarpone cheese blankets the daikon, along with a dusting of Chinese five-spice powder and cacao powder. Nestled beneath the daikon are Mikan Mandarin oranges with Mikan puree. The overall taste is not too bad, though this dessert is also potentially a hit or miss amongst diners with its adventurous combination.

Rants Most Japanese omakase dining experience is over the counter in an intimate setting where you get that interaction with the chef, something which is missing here.
Will I Return Again? It is great that the Omakase options for lunch or dinner are quite competitively priced at Moss Cross Tokyo Singapore. I wouldn’t say there is a particularly memorable dish for me, but safe to say nothing tastes too bad either.
