Food Review: Mashi No Mashi At Guoco Midtown, Bugis | The World’s First & Only 100% Wagyu Ramen Opens In Singapore
The Place Located in the heart of Bugis at Guoco Midtown, the latest addition to the dining scene here is Mashi No Mashi, famous for serving the world’s first and only 100% wagyu ramen. Mashi No Mashi is a concept by Hisato Hamada, founder of Wagyumafia, and this is their first outpost in Southeast Asia where it also has outlets in Hong Kong, Tokyo, and Jeddah.


The space of the restaurant is casual and brightly lit, with indoor counter seats, tables and outdoor seating as well.


The Food Each item on the menu is made exclusively with Chef Hisato’s hand-selected Ozaki beef, known for its rich umami flavour with subtle hints of sweetness. There are some Singapore-exclusive dishes like the Wagyu Bak Kut Teh Ramen.


One of the signature dishes to havehere is the Ultra Wagyu Ramen (S$22) which features thin Hakata-style noodles with thin slices of Wagyu Chasiu. 100% in a Wagyu Bone Broth. The Wagyu beef is tender and flavourful in the rich beef broth.


I also had the Wagyu Tsukemen (S$30) where the thick whole wheat noodles come with Wagyu Chasiu, Wagyu Dipping Sauce, Soft-Boiled Egg, Bamboo Shoot, Nori and Cabbage. The sweet dipping broth is made by stewing wagyu bones for 24 hours, so you can expect a pretty intense flavour.


There are also donburi options on the menu like the Wagyu Cha Siu Donburi (S$32) topped with Raw Japanese Egg Yolk in a Ginger Beef Akitakomachi Rice. I find that the Wagyu beef here was drier as compared to the ones which I had with the ramen.


Save some space for the Dim Sum dishes on the menu which are quite an interesting twist from the familiar Cantonese dim sum items. Think Wagyu Gyoza (S$15) with pepper vinegar sauce, Wagyu Spring Roll (S$12), Black Bean Spare Ribs (S$15) featuring Steamed Wagyu Spare Ribs with Black Bean and Garlic Sauce, and the Wagyu Siu Mai (S$15) which is my top pick as it comes with juicy and generous portion of the wagyu beef.




For drinks, there are aplenty to choose from such as various spirits, beers, cocktails and highball.


Rants Prices are on the higher end if I were to compare it to other ramen shops in Singapore. But hey, it is Wagyu beef here.
Will I Return Again? If you love beef, this beef ramen spot is definitely something interesting to try in Singapore since it is quite different from the usual and familiar tonkotsu (pork broth) ramen. Other than the ramen, the dim sum dishes are worth a shot too.
