Food Review: Ingleside At Tras Street | Modern European Restaurant In Tanjong Pagar With Wood Fire Cooking

The Place One of the newest restaurants to open on Tras Street, Ingleside is a new modern European restaurant in Tanjong Pagar spearheaded by Louis Chan and Jana Jusman, a husband-and-wife couple serving as Head Chef and Head Fermentation Specialist. 

The restaurant specialises in on-site fermentation, dry-ageing, and wood-fired cooking, from lacto-fermenting vegetables to ageing misos for months with their homegrown koji. 

The interior of Ingleside is modern where there are counter seats which overlook the open kitchen where the fire action takes place. Alternatively, the table arrangements also suit small group diners or couples. 

The Food The 2-3 course lunch starts from S$58++ while 6 course dinner starts from S$128++. Highlights include the Mozambique Carabinero Prawn flambadoued with dry-aged beef fat, Roasted bone marrow wagyu tartare with a myriad of housemade ferments, and the Westholme MBS 6-7 Picanha where the steak is aged in house-grown shio koji. 

I had the 6-course dinner menu and here is what to expect: 

Seasonal Snack (3 snacks in total) 
You can expect snacks like the Truffle Toast made from brioche along with foie gras mousse, sauternes jelly and fresh black truffles. 

Entree 
Choose from options like the Smoked Kingfish with kombu cure, grilled cucumber, pickled jalapeño, fingerlime, lacto tomato dressing and herb oil; or the likes of the Mozambique Carabinero Prawn flambadoued with dry aged beef fat, shrimp and rose garum, burnt lemon (+S$32). 

Main Course 
There are a few options here and you can expect the likes of Atlantic Octopus with smoked pepper squid garum puree, black garlic aioli, herb aioli, prawn oil and charred fennel. 

I recommend going for the Tajima MBS 6-7 Koji Picanha with shio koji, pomme puree, slow roasted banana shallot (+S$18). This is flavourful and tender. 

Dessert 
Expect options like Deconstructed Lemon Meringue Tart with yuzu granita, smoked ice cream, lavender lemon curd, thyme crumb; and Smoked Chocolate Brownie with Belgian chocolate, grilled pineapple and coconut foam. 

Rants There are quite a couple of dishes on the set menu which require a supplementary charge. Desserts are also the weaker link in my opinion.

Will I Return Again? There are much thoughts put into the concept of Ingleside, along with painstaking and elaborate methods of preparation of its ingredients. While the dishes are well-executed in general, the missing part for me seems to be the element of surprise as it feels like I have had similar dishes elsewhere. The good news is that the set menus for lunch and dinner are priced relatively reasonable for now.

  1. I visited Singapore over 5 years ago at this point and I miss it! Although it seems that you weren’t incredibly impressed by this place, the photos are stunning!!
