Food Review: Dearborn @ New Bahru | Popular Granola Specialty Brand Opens New Hip Bakery Cafe With Fresh Sourdough And Seaweed Madeleine

The Place New Bahru is the hottest dining and lifestyle destination in Singapore lately and Dearborn @ New Bahru is easily one of the most popular dining destinations here. Located on level 3 of what used to be a primary school premises, Dearborn is not unfamiliar to those who have been a loyal follower of Chef Christopher Kong’s granolas when Dearborn was literally first born at Everton Park. In fact, Chef Christopher used to run a supple club concept pre-Covid period, and the Dearborn brand has advanced leaps and bounds since then. 

The space of Dearborn @ New Bahru is not huge where there are limited outdoor seats where you get to bask in the morning sun. The bakery cafe was packed when I arrived at 9:10am, where there is a long communal table in the middle along with a couple of cosier table seats by the side. 

The Food It is not a particularly extensive brunch menu here where almost half the menu are bread-related items.

I had the Dearborn Breakfast Sandwich (S$15), one of the more substantial items on the menu. This is a combination of homemade pork sausage, American cheddar, egg and spicy pepper relish on sweet potato roll. It is already nicely sliced into half which makes it easy to share. 

I really enjoyed the Smoked Cheddar and Chili Sauce Sourdough Toast (S$7) where the chilli and cheddar combination sound interesting to me, and quite a refreshing take on sourdough. It is a nice and airy texture of the bread which is not too tough. Served with Dearborn butter which makes it all the better. 

Another must try item is the Seaweed Madeleine (S$6) where you get that nice crispy texture at the edges, and it is a nice mix of savoury and sweet flavours. 

Nothing too fancy for the coffee options where we had the White (S$7) and Black (S$6), both double shots by default. 

Rants A dining limit of 60 minutes applies and the queue forms inside the store, so you do get curious stares from the queuing crowd. 
 
Will I Return Again? For the bakes and bread, I think it is worth heading back. Weekdays are probably a better option if your schedule allows without the crazy weekend crowd.
