Food Review: Sushi Masa By Ki-setsu At Cuppage Plaza | Hole-In-The-Wall Japanese Omakase Sushiya

The Place Nestled in Cuppage Plaza, Sushi Masa By Ki-setsu is a new Japanese omakase restaurant helmed by Chef Masa. It is a cosy interior which accommodates less than ten pax, where every diner sits around the wooden counter with a close interaction with Chef Masa. Chef Masa only arrived in Singapore recently for the opening of Sushi Masa and was previously based in Japan, with decades of experience. The bonus is that he is very fluent in English which makes it very easy to make out what is he saying as he introduces each course. 

The Food There is only dinner service, and three tasting menus are offered, starting from S$230+ for the 16-course Syuugetsu menu. 

I had the Syuugetsu menu and here is what to expect – Seasonal Appetisers, Sashimi, Cooked dishes, Nigiri Sushi, Soup and Dessert. 

Soup 
A simple and clear soup with Matsutake mushroom for a start. 

Goma-Saba 
The fish from Mie prefecture and is cured with salt and marinated with vinegar, and also grilled over binchotan.

The series of Nigiris I had. 

Tai (Snapper) 

Shiro Ika (White Squid) 

Akami aged for 11 days  

Nodoguro (Blackthroat Seaperch)
One of my favourite fishes, the delicious Nodoguro here is from Nagasaki. 

Amaebi (Sweet Shrimp)

Iwashi (Sardine)

Chutoro (Medium Fatty Tuna)

Kohada (Gizzard shad) 

Otoro (Fatty Tuna)
I can’t resist a good Otoro and you can imagine the fattiness after this is grilled over binchotan. Topped with wasabi skin. 

Uni (Sea Urchin)

Anago (Saltwater Eel)

Tamago (Egg)

I especially enjoyed the cooked dishes other than the series of Nigiris, such as the Toro Sawara fish with fried leek. 

Ankimo (Monk fish liver) 
This is grilled so you get that fatty and soft texture which has more umami. Topped with a pinch of salt for added flavour, one of my favourite courses here. 

Bonito 
Another hit for me is this bonito glazed with chef’s onion sauce.

Rants Prices are steep even for the entry level dinner menu. Unfortunately, there is also no lunch service for now as well. 

Will I Return Again? I like that Sushi Masa tries to break the usual momentum of an omakase meal, such as interjecting cooked dishes in between the Nigiris so that diners will not get too bored easily. The flavour profile of the dishes here are also more flavourful than the traditional omakase, if that is what you prefer.
