Food Review: One Prawn & Co At New Bahru | Modern Asian Woodfire Seafood Restaurant
The Place Located in the buzzing New Bahru, One Prawn & Co is a new modern Asian seafood concept by Chef Gwyneth, who is also behind the Michelin Bib Gourmand Zhup Zhup in MacPherson. Chef Gwyneth used to hold stints in Burnt Ends and Forlino, where she has a passion for woodfired dishes and in particular, seafood.

The space of One Prawn & Co is spacious with a mix of outdoor and indoor seating.

It is an open layout for the indoor space, with the counter seats offering the best view of the open kitchen concept where dishes are grilled over woodfire.

For bigger groups between 6 to 10, there is the Chef’s Table for a more intimate setting.

The interior takes on an edgy industrial vibe with metallic charcoal grey tiles, burnt wood finishes, and rusticated metal, softened by wild wood grain and violet accents on the upholstery.

The Food Seafood. Woodfire. Dry-ageing. These are the elements that define One Prawn & Co’s menu where Chef Gwyneth fuses Eastern cuisines with Western cooking techniques. I visited the restaurant for dinner where the menu is designed around sharing – Bites, Smalls, Hearth, Starches, and Desserts.

From bites, I started with the Ankimo Mousse, Love Letter, Pink Peppercorns (S$18) inspired by a classic Singaporean Chinese New Year snack. The Love Letters Cigars here are filled with Ankimo mousse (monkfish liver) and sprinkled with floral pink peppercorn salt. Quite an interesting take on a roll and the taste of the ankimo mousse is smooth and distinct.

The Beef Bulgogi and Bafun Uni (S$24) is another bite size snack which is easy to resonate with. Tender beef on soft toast topped with uni, have it all at one go.

For smalls, I had the Dry-aged Hamachi, Kimchi, Puffed Rice (S$26) which features 16-day dry-aged hamachi crudo tossed in kimchi and dusted with wakame powder. It is served with puffed rice, spring onion, and finished with flying fish roe.

For hearth, the Carabinero, Sakura Vermouth and Toast (S$72 for 2 pieces) comes with crisp toast which I used to mop with the delicious sakura vermouth cream. The deep-sea Carabinero prawn itself is fresh and if you feel like indulging in something luxurious, this is the dish to try.

I also tried the Monkfish and Cashew Curry (S$52) where the Monkfish loin is wrapped in banana leaf and grilled over charcoal. It is paired with a rich cashew curry, featuring toasted cashews blended with black mustard seeds, coriander, turmeric, shallots, and coconut milk. I love the curry sauce which is not spicy, but rich in flavour. No toast is served with this dish but I can imagine it will go very well with the curry sauce as well.

For starches, I had the Braised Sea Cucumber, Seasonal Uni, Scallion (S$108) (Option to top up 30g Uni: +S$40). A generous serving good for 3-4 pax, the charcoal-cooked claypot rice is topped with tender braised sea cucumber, slow-cooked in a rich consommé of pork hocks, duck, and chicken. Finished with spring onion and a generous serving of seasonal Uni.


The OPC Signature Haddock Burger (S$24) is an easy option to go for if you have a small appetite where it features lightly battered haddock nestled between two buttery, house-made brioche buns and paired with zesty yuzu aioli.

Something off menu I had during my visit as recommended by the staff was the fresh Mussels (S$26) served in a claypot along with crispy toast to go along with the sauce!

For dessert, I was satisfied that I went with the Smoked Ice Cream, Kaya, Coffee (S$18) as I love that distinct smokiness. It is not too sweet as well which makes it easy for me to enjoy it.

Rants A note of caution if you are at the counter seats in front of the stove that it can be quite warm.
Will I Return Again? I love a good woodfire concept and it is nice to see this new addition to New Bahru, adding another layer of diversity to the dining options here. I think One Prawn & Co has a good concept and it was a good meal overall for me. As a new restaurant, it probably just needs to find its footing and create signature dishes with oomph which diners will return for.
