Food Review: Sushi Muni At International Plaza | Value For Money Japanese Omakase In Tanjong Pagar From S$68++

The Place Tucked away on level two of International Plaza in Tanjong Pagar, Sushi Muni (無二) is a new and intimate Japanese omakase restaurant with only ten seats. It is a minimalist setting with just counter seating, helmed by Head Chef with a focus on traditional Edomae sushi featuring wet-aged fish.

The Food Only set menus are available with lunch sets from a good value S$68++ which includes seven pieces of sushi and more, while dinner is from S$168++. 

Here is what to expect from the S$168++ dinner menu I had: 

Amuse Bouche 
A duo of bites is showcased where I had Marinated Shiromi and caviar paired with an airy meringue, as well as a Chutoro Tart. 

2 Seasonal Appetisers 
For the cold appetiser, I had a refreshing mix of fine thinly sliced Baby Sea Eel along with compressed watermelon and grated Japanese cucumber. 

One of the current seasonal highlights is Ankimo (monkfish liver), prepared using Chef Chon’s secret milk-based technique. This is served in two forms—sliced and mashed— where the Ankimo is paired with a creamy goma (sesame) sauce and sweet persimmon. 

3 Types of Sashimi 
A trio of sashimi is up next where I had fresh slices of Spanish Mackerel, Akagai (Ark Shell) and Chutoro. 

Wagyu Suki-Shabu 
It is not common to have a sukiyaki course in a sushi omakase meal and I was delighted to have this delicious serving of Miyazaki A4 wagyu beef topped with sushi rice puff. 

Uni Somen 
A course of fine arrowroot starch noodles in a light soup base topped with Ikura, Bafun Uni, and dried Nori (seaweed). It is an innovative take on somen as chef uses arrowroot starch instead of traditional wheat flour which is chewier. 

Next up is the sushi course which features traditional Edomae-style techniques. For the shari (sushi rice), it is seasoned with a blend of aged vinegars, including red vinegar matured for three years in wooden barrels. At Sushi Muni, nearly all fish undergo wet-ageing.

Sayori (Japanese halfbeak)

The last savoury course is a big handroll of thick slices of tuna which is full of umami.   

Tamagoyaki & Soup

Dessert 
A refreshing bowl of white wine jelly, Setoka orange and Aomori strawberry to conclude the meal. 

Rants My only gripe is perhaps I prefer my shari to be slightly sweeter.

Will I Return Again? Very competitively priced menus at Sushi Muni where ingredients are fresh, and you can expect a very decent Japanese omakase meal here. it is centrally located, yet out of sight unless you are already aware of its existence.
