Food Review: Ka-Mon At Resorts World Sentosa (RWS) | Singapore’s First Restaurant Showcasing Three Iconic Japanese Grilling Traditions
The Place Located beside the newly opened Spanish fine-dining restaurant Sugarra, Ka-Mon is a new casual Japanese restaurant by Resorts World Sentosa in Hotel Michael helmed by Chef Hal Yamashita. The space of Ka-Mon is huge, an 80-seater interior designed by the internationally renowned Steve Leung Design Group (SLD), where you can expect warm natural wood tones, bamboo accents, and soft lighting. There is an open kitchen station which diners can witness the art of grilling up close as it focuses on three traditional Japanese grilling techniques – Irori (sunken hearth), Robatayaki (fireside cooking), and Warayaki (straw-fired grilling).


The Food The dishes here is a take on “New Japanese” cuisine where you can expect modern twists to Japanese ingredients from an ala carte menu.
I started with the Organic Eggs & Ikura (S$12) which has soy-marinated ajitsuke tamago, ikura, and Hokkaido Uni topped with freshly grated wasabi.

The Wagyu Beef Tartare (S$26) has different aspects of Asian touches where the chopped Wagyu beef is seasoned with soy, garlic, sesame, and a touch of gochujang (Korean chili paste). The flavour is slightly sweet and subtly spicy. Topped with a quail egg yolk, it is also served alongside crisp Indian papadam.

Next up was the Irori Grilled Jumbo Tiger Prawn (S$10) which features locally sourced jumbo tiger prawns skewered and slow grilled over charcoal in the traditional Irori style. The prawn is further enhanced with just a sprinkle of Maldon Sea salt and a squeeze of lemon. Try the meat in the prawn head too which packs the most umami and jus.


The Tuna Wara Tataki (S$32) uses sustainably sourced Big Eye Tuna from Australia’s East Coast, where warayaki (straw fire searing) is used, allowing the high flames to lightly char the exterior while leaving the centre buttery and raw. The overall flavour of the tuna is a slightly smoky aroma along with ponzu sauce, thinly sliced myoga, and crispy garlic chips.


For meats, I also had the A4 Kagoshima Beef Striploin (S$98) which is grilled on a Robatayaki grill using binchotan charcoal. You get a slightly charred beef texture and a succulent meat, along with a side of Maldon Sea salt to complement the beef.

Rants While the starters are priced quite reasonably, the wagyu beef I had is priced on the higher end.
Will I Return Again? If you are looking for a mid-range Japanese restaurant to dine in RWS, Ka-Mon is one to check out. Is this worth specially heading down for? Probably not for me.
