Food Review: Dill At Duxton Road | Scandinavian Dining Restaurant By Norwegian Chef Daniel

The Place A relatively new and low-key restauarnt has opened quietly in Duxton Road late last year. Meet Dill, a rare Scandinavian restaurant in Singapore which took over the now-defunct Yue Bai. The interior of Dill still takes on the wooden furnishing from its predecessor, along with changes to the tables and seating arrangement to suit the casual fine-dining space better.

The concept of Dill is helmed by Norwegian Chef Daniel Hasvold Jung-Eldøy, who has worked at Michelin starred The Square London and Fauna Oslo previously, before he opened his first restaurant in 2017 – Restaurant Galt in Oslo – which received a Michelin star in January 2018. In 2020, he closed Galt to open Restaurant Schlagergården which opened in 2021 and was awarded a Michelin star the following year.  

The Food The menu is a mix of set menu and ala carte dishes, where Chef Daniel aims to showcase Scandinavian, laid back, fine dining style of cooking – in Singapore. Run by a small team serving a set menu dinner, or just casual snacks and bites with Scandinavian flavours. I had a chat with the team and found out that many dishes on the menu use Scandinavian produces to preserve the authentic flavours as well.  

For beverages, you can opt for Wine Pairing (S$85) if you are going for the dinner set menu.

For a start, I had the Waffle with Löyrom (S$29), a delicious starter where Löyrom is cured fish roe, akin to caviar in Scandinavian terms to some extent. I like the creminess of the Löyrom along with the slightly crisp texture of the waffle.  

I then had the 5-course dinner Set Menu (S$140) and here is what to expect: 

Green asparagus, oyster emulsion, salted egg 
A light starter to kickstart the meal where the salted egg element is a nod to local Singaporean salted egg, though it is quite mild in this dish, as it is a well-balanced mix of the subtle oyster emulsion as well.    

Scallops, peas, leek 
The leek takes the form of leek sauce here, which is quite buttery to my liking. Huge Japanese scallops along with peas which brings out the freshness of the scallops. 

Cod, fennel, fermented celeriac 
I love a good cod, and this is from Norwegian cod. The element of sauce is quite evident in this course as well and there is nothing not to love about that fermented celeriac sauce. The portion of the cod is also very generous.  

Lamb, burned onions, ramson 
For mains, this lamb is a tad gamy though we love the burned onions here.

Alternatively, The Rantee had the Wagyu onglet, tarragon, kailan instead since he doesn’t really take lamb. The beef is flavourful and you get a nice beefy flavour since it is not too fatty. The use of kailan is also a nice twist to Chinese cuisine.    

If you fancy some additional sides to go with the mains, the crispy Potatoes, brown butter, yeast (S$8) will not disappoint. Very crisp texture of the potatoes and I would have polished it off if not for the fact that I was too full. There is also the Sourdough with chicken emulsion (S$10), freshly baked and I love that chicken emulsion sauce.

For dessert, it comes with a mix of Almond, chocolate, plum

If you are in for more sweet treats, I highly recommend the Svele with brown cheese ice cream (S$19), a type of Norwegian pancake. It is served with a very unique brown cheese ice cream which is smooth in flavour and not pungent in taste at all. Brown cheese, as I learnt from Chef Daniel and his Norwegian wife, is something which many Norwegians grow up eating.  

Rants Scandinavian cuisine is not a familiar territory for some diners in Singapore, and it definitely helps if the team can explain the menu and ingredients in more detail (which they did during my visit).

Will I Return Again? There are not many Scandinavian restaurants in Singapore and Dill is a fresh injection into our dining scene. Chef Daniel and his team are very passionate about Scandinavian cuisine, and Dill is one spot to check out if you have been curious about it.
