Food Review: Pizzeria Vincenzo Capuano At Robertson Quay | Award-Winning 50 Top World Artisan Pizza Chains
The Place Located at Robertson Quay is the newly opened Pizzeria Vincenzo Capuano, an award-winning pizzeria by Chef Vincenzo Capuano. The Italian restaurant took over the space of the now defunct Kubo Woodfired Kitchen, and it has both indoor and outdoor seating. The brand has 30 global outlets and is ranked 12th-place on the 50 Top World Artisan Pizza Chains 2024. This is also its first foray into Asia.

Chef Vincenzo was born and raised in Naples, Italy, and is a third-generation master pizzaiolo with over two decades of experience, best known for his contemporary Neapolitan pizza.

The Food The ala carte menu is a selection of starters, salads, pastas and a wide range of pizza flavours. Chef Vincenzo’s secret to his pizzas lies in a recipe of long-leavened and highly hydrated dough made from “Nuvola Super” flour, which he developed alongside a flour manufacturer.
For a start, I had the Insalata Al Salmone (S$26) which is smoked salmon with rucola, cherry tomatoes, cucumber, and capers with a roasted sesame dressing. A light and refreshing dish to start the meal.

For pasta, I went for the Guanciale Di Manzo (S$30) which is made with house-made fusili doused in 12-hour slow-cooked wagyu beef cheek ragu and red wine. I like the rich flavor of the beef ragu and the fusili just mops it up very well.

I only managed to try one pizza, and it is a no brainer to go for the World Champion Pizza, the Provola E Pepe (S$28), winner of the 19th Pizza World Championship. A simple looking pizza with fluffy crust, and it comes with smoked provola on a bed of hand-crushed tomatoes, pepper mix, seasoned roasted cherry tomatoes, and basil.

The dough is very soft, and if you are more of a cheese-based pizza than tomato based, this is not for you.

For desserts, the Tiramisu All’Amaretto (S$17) is layered with mascarpone lombardo, savoiardi biscuit, crushed pistachio, physalis, and a soak of amaretto.

Rants The desserts here are not that exciting unfortunately.
Will I Return Again? Overall, it was an ok meal for me given that I only managed to try one pizza. Service is warm, and I appreciate the fact that there are so many pizza flavours to choose from. The award winning Provola E Pepe is not quite my cup of tea though.
