Spicy Noodles 大師兄销魂面铺
The newest dining concept to open in Raffles City is Spicy Noodles 大師兄销魂面铺, known as Xiao Hun Mian in Chinese, originally from Taiwan. This popular brand from Taiwan opened back in 2017 and often has long queues back home even though there are 18 outlets across Taiwan. Located at the basement of Raffles City, this is also the brand’s first Singapore outlet. Noodles is the star here and the secret of their namesake Soul Stirring Noodles lies in their Soul Chilli Oil, which is made entirely without preservatives, and crafted by chilli artisans who stir-fry the mixture wholly by hand for a laborious 8 hours each day. Expect a similar menu as its Taiwan outlets, with a choice of clear broth or spicy mala made from pure beef bone simmered for at least 6 hours. These are all paired with their signature chewy handmade Xiao Hun Noodles. [Read more here for our full review

Pizzeria Vincenzo Capuano
Located at Robertson Quay is the newly opened Pizzeria Vincenzo Capuano, an award-winning pizzeria by Chef Vincenzo Capuano. The Italian restaurant took over the space of the now defunct Kubo Woodfired Kitchen, and it has both indoor and outdoor seating. The brand has 30 global outlets and is ranked 12th-place on the 50 Top World Artisan Pizza Chains 2024. This is also its first foray into Asia. The ala carte menu is a selection of starters, salads, pastas and a wide range of pizza flavours. Chef Vincenzo’s secret to his pizzas lies in a recipe of long-leavened and highly hydrated dough made from “Nuvola Super” flour, which he developed alongside a flour manufacturer. [Read more here for our full review

Chef’s Tavern
Located along Craig Road, I checked out the newly opened Chef’s Tavern which is the latest venture by Chef Stephan Zoisl, who is also behind ‘Western Omakase’ concept at Chef’s Table. The name ‘tavern’ is a loose translation of izakaya, where the concept of Chef’s Tavern is to bring together classic European fare and refined Japanese culinary techniques. You can expect a unique Teishoku-style lunch set, where fresh seasonal ingredients take centrestage. There is also an à la carte menu with highlights like the Hokkaido Scallop Crudo and Cold Kombu Angel Hair Pasta. [Read more here for our full review

Morita Unigoro
Located on Stanley Street, the newly opened Morita Unigoro from Osaka is a must try for sea urchin lovers. Scoring a table at Morita Unigoro in Osaka is known to be challenging as it has only 10 counter seats and only two dinner sessions a day. Singapore is Morita Unigoro first international outpost, and it is a cosy and intimate space with just 14 counter seats and a private room for two to four diners. Set menus are offered here for lunch and dinner where the team takes pride in the sourcing of ingredients such as highest-grade sea urchins from Hokkaido, Ise Ebi (Japanese spiny lobster) from Ise-Shima in Mie Prefecture, A5 wagyu beef, and more. [Read more here for our full review

New Ala Carte Menu At Altro Zafferano
Led by Executive Chef Andrea De Paola and Head Chef Federico Schiraldi (previously of Fico) who joined the team last year, one of the new dishes I enjoyed quite a fair bit is the Rigatoni alla Gricia – Artisanal Rigatoni, Guanciale, Pecorino which is served tableside on a Pecorino Cheese Wheel. Cheesy and creamy to my liking! Expect new dishes like the crunchy Pomodoro e Basilico where the delicious focaccia is house-made using a sourdough and is baked with Neapolitan tomatoes; Beef Carpaccio, Arugula and Pecorin where the Australian grain-fed beef carpaccio is rolled with rocket, pecorino cheese and balsamic vingar. For pasta, the Artisanal Fusilloni with Wagyu Beef Cheek is a hearty portion to complement the Rigatoni. Protein wise, I enjoyed the Tagliata di Manzo, Rucola e Balsamico – where the tender and flavourful Black Angus Grain-fed Beef is delicious.
