Food Review: Udon Shin At Takashimaya, Ngee Ann City | Famous Tokyo Udon Brand First International Debut In Singapore

The Place We all love Japanese food, don’t we? Located at basement two of Takashimaya in Ngee Ann City is the newly opened Udon Shin, Tokyo’s udon specialist which made its first international debut in Singapore this November. The brand started back in 2011 in Shibuya, it is well known for its chewy and freshly handmade udon. 

The space of Udon Shin is casual, and a dining layout which is suited for small dining groups. 

The Food Udon Shin operates on its “Four Fresh” philosophy – freshly kneaded, freshly cut, freshly boiled, and freshly fried. Each strand of udon is freshly made in-house daily for a signature silky-yet-springy texture, delivering a balance of koshi (firmness) and nobi (stretchiness).

While the carbonara udon is the signature cult favourite, the menu also features comforting hot and cold udon dishes alongside tempura fried to order. 

If you can only try one dish, it is Carbonara Udon (S$24) for me. I enjoyed this Kamaage Udon with Dashi, Raw Egg, Parmesan Cheese, Butter, Pepper, Spring Onion and Bacon Tempura. It has a nice buttery flavour and I must say the udon texture is great – chewy and very appetising. 

For soup udon, the Premium Tempura Kake Udon (S$34) is a hot soup udon with spring onion and an assorted tempura mix (2 Shrimps + 4 Vegetables + Fish + Squid). I like the broth of the udon which is dashi-based, and it spots a very clean taste.

The tempura items are fried quite well and not too greasy, where the batter is light and crisp.  

For cold udon, I tried the Tempura Zaru Udon (S$28) where the udon is served on bamboo tray. It comes with spring onion and an assorted tempura (2 Shrimp + 4 Vegetables). 

Rants Note that each strand of udon is quite long, which could be difficult to scoop out of the bowl if you are planning to share.  

Will I Return Again? A casual Japanese restaurant worth trying if you are in Orchard Road. Noodles are comfort food for me and this udon specialty restaurant is something I would not mind having again.
