Food Review: Drim Gold At Weave, Resorts World Sentosa | Gorgeous Cave-Inspired Hanok Korean Restaurant With Hanwoo Beef
The Place Another exciting new opening I checked out at Weave, Resorts World Sentosa (RWS) recently is Drim Gold, the first Korean restaurant in this new lifestyle and dining building in RWS by the same flagship brand Drim at Mandarin Gallery. The name Drim is rooted in the Korean word “Deurim (드림) ” which signifies the act of presenting something with the utmost respect and heartfelt sincerity.

One key highlight of Drim Gold is the dramatic large-scale cave-inspired interior with refined modern Hanok (traditional Korean architecture), as evident right from its entrance.

The space is designed in an elegant style, where the cave-like structure does not come across as too tacky. Seating is thoughtfully arranged to suit different party sizes – counter bar seats provide an intimate view of table-side grilling for solo diners or couples, while square tables for eight features built-in grills for groups.

There are also private dining rooms.

The Food As opposed to Drim in Mandarin Gallery, the menu at Drim Gold is an expanded and more diverse version. Key highlights are the rare Hanwoo beef and Jeju black pork alongside an all-new selection of premium seafood options, Jeju abalone, and Korean eel.

In terms of ordering, you can choose to go ala carte or opt for the set menus.
For a start, I had the Scampi with Kimchi (S$77) which features two huge sashimi-grade scampi which is just lightly torched. While it is quite pricey, the scampi is very fresh and juicy, and it goes well with the accompanying kimchi XO sauce.

Another indulgent treat is the Butter-Grilled Jeju Abalone (S$88) which is a must try if you love this seafood. The fresh Jeju abalone is gently seared in butter and is tender too.

On to the meats, a noteworthy mention is that the meats are grilled tableside by the staff, which is great as they know better on how to handle the meat in the best way.

I tried the Korean Beef Cut (MP) which is an exclusive monthly selection of premium Hanwoo.

The hanwoo beef flavour is rich but not cloying, and I enjoyed it best with just a tinge of salt. You can also enjoy the beef by wrapping it with vegetables.

To complement the beef, I also had the Drim Prime Cut (S$42), their Signature Galbisal which features Iberico boneless ribs. Tender pork texture with a flavour which is not too fatty.

If there is a unique dish to go for at Drim Gold, it is the Korean Beef & Vegetable Hot Pot (S$138) for me. This is a generous platter (serves 2-3 pax) of Hanwoo beef brisket and beef shank, gently simmered in a rich Korean beef broth.
It is a traditional dish from Pyeongan Province where the hot pot also comes with seasonal vegetables like mushrooms and chives. I love the clear broth which is easy to drink, yet it also has the depth of flavours.

For carbs, I enjoyed Drim Signature Noodle (S$33) which uses 100% Buckwheat Cold Noodle with Fragrant Perilla Seed Oil. Simple in presentation, but the springy noodle texture is and clean taste are some of the things I love about it.

Rants Prices are on the higher end for some of the dishes like the scampi and abalone, which probably makes the set menu more value for money especially if it is your first visit.
Will I Return Again? I enjoyed all the dishes above at Drim Gold, and the interior design is not something typical of a Korean restaurant in Singapore. Good quality of the meats and the best part is that it is a smokeless dining experience despite the grilling of the meats.
