This Jack Johnson track sprung to mind as I licked off the last of the ice cream and chomped on the final cookie crumb. Yes, that just happened – ice cream and cookies, together. Say hello to In Between, a boutique dessert booth at Bukit Panjang Plaza. It is a secret cookie of joy.
First was the café fever, then the tea craze. Now, everywhere you stroll, it is easy to spot a dessert place specialising in some item or other. The first thought I had about eating ice cream and cookies together was – are you serious? How far do I have to run for that?

Not as much as I guessed, it turns out. In Between consciously lowered the sugar content of both the freshly made ice cream and freshly baked cookies so that the combination works in flavour and with your calorie budget. But I had to try it to know it. So I tried the Sicilian Pistachio, Himalayan Salted Caramel, Tahitian Vanilla, Premium Mascarpone, and Italian Biscotti Crunch ice cream ($3.80 per scoop). Yes, I am one of those nightmare customers who hog the ice cream display. Bite me.
Anyway, back to the sweet delights. I stood in front of the cookie counter for quite awhile, before deciding to go with the Soft Gingerbread and Chunky Peanut Butter with Reese’s cookies ($1.50 each, $3.80 for three). Thereafter, they were paired with the Italian Biscotti Crunch.
Pay attention now, this is where you get lucky: every sammie (slang for sandwich) comes with two cookies and icecream, goes for only $4.90 and you get to choose your cookie flavours, and ice cream flavour. Feel free to ask the team for recommendations! I went through quite a few options before deciding on my boss combination.
I bit into my sammie like it was a real burger. I thought – this is gonna be sugar overkill.

I thought – I’m gonna have to run for fifteen hours and crawl through my door like that marathon athlete did.

I thought – I am too old to be gorging on this dessert meant obviously for overexcited 5-year-olds.

Then, I stopped thinking, because, lo and behold, this combination of cookies and ice cream was actually not too sweet, and the flavour combination was memorable and absolutely delicious.
