The Place Located at the Marina at Keppel Bay, Platinum Vibes is an exclusive space for American Express The Platinum Card (psst, this is to be differentiated from the Platinum Credit Card) and the by-invitation-only Centurion Card. Taking up two units on level two of the Marina, the first unit houses a lounge with a sweeping view of the marina and the luxe condominiums along Keppel Road. Chill here with finger bites and sip on wines with more than 100 labels available, including many rated above Robert Parker 90.
For dining, the other unit houses a restaurant with a menu conceptualised by Chef Emmanuel Stroobant of one Michelin-starred Saint Pierre and Chef Yoshio Sakuta of two Michelin-starred Shoukouwa. Do expect a myriad of French and Japanese items available on the menu here.
The Food I visited Platinum Vibes with Chef Emmanuel present to manage the kitchen, and would imagine that this should ensure an enjoyable meal. With a minimum annual income requirement of S$200,000, and an annual card fee of S$1,712 for the Platinum Card, Platinum Vibes does have pressure to deliver. For starters, the Scallop (S$12) starts the meal well, with the refreshing marinated scallop, black winter truffle, cream fraiche and lemon zest. Order the Tomato Burrata (S$12) to share amongst friends, with sweet-summer tomato, burrata, extra virgin olive oil and white balsamic.
The Japanese items here include Katsuo (S$14), Smoke Hamachi (S$12) and the Don (S$18). The former being marinated bonito tataki and the Don being a chirashi don, with cuts of ikura, tuna, hamachi, prawn and scallop. Go for the don, with fresh seafood supply similar to that of Shoukouwa, you will not be disappointed.
For the mains, I strongly recommend for you to go for the Roasted Chicken “vol au vent” (S$14) where the tender chicken breast is served on a wild mushroom tart. I am surprised by how soft the texture of the chicken breast meat here.
Alternatively, go for the 48h Braised Beef (S$18). Nothing surprising here, but trust Chef Emmanuel to present this classic well. If you are in the mood for seafood instead, the Salmon Confit (S$18) is a good option.
Rants Not the most ideal set up, with the lounge and restaurant split across the second level of the Marina.
Will I Return Again? Well, it is not a case of if I will return again, since I do not hold an American Express Platinum Card now. Although it truly is an exclusive dining destination amidst the private yachts and upscale neighbourhood, with credible chefs helming the concept. With competitive pricing, this is a place to invite friends to impress, or for an intimate catch-up.
