Food Review: Skai At Swissotel The Stamford | New Skai High Tea Set With Japanese Inspired Elements

The Place Located on level 70 of Swissotel The Stamford, the one year old Skai restaurant just launched its afternoon tea recently, Skai High Tea. Even though Skai is a contemporary grill concept, it does make sense for an afternoon tea menu here. Why waste that spectacular city view in the day?

It is hard not to be impressed by Singapore’s skyline if it is your first time to Skai. I like the full glass panes, high ceiling and the fact that I can see the infinity pool of Marina Bay Sands at eye level.

The Food The brand new Skai High Tea is a 3-tier affair, and it doesn’t come in the usual design. Priced at S$60++ per person, the savoury and sweet items are placed in a bonsai shaped stand, which is quite captivating.

The price includes a choice of TWG Tea or Suzuki coffee, and I would recommend going for the tea as the list is specially curated to complement the high tea items.

The main differentiation of Skai’s high tea from other hotels is that there is quite a fair bit of Japanese elements, judging from the items on the stand.

Highlights from the savoury tier for me are the lobster roll topped with ikura, foie gras in polo bun, and the asparagus and feta quiche.

From the sweets selections, the execution reminds me of those I have seen at Japanese pastry shops. The memorable items for me are the 72% chocolate sable tart, matcha tea mascarpone and candied black bean sesame.

As with all English high tea ritual, baked scones are a must have. The scones here are served with strawberry jam, Devonshire cream and lemon curd.

If you are still thirsty, you can opt to have champagne by Taittinger Brut Reserve (S$15/glass).

Rants High tea in most 5 star hotels in Singapore do not come at a friendly price tag. Save this space for a special occasion.

Will I Return Again? While there are many hotels in Singapore which serves high tea, Skai is one of the few which offers a great view while you sip on your tea. This is a great space to impress your date, or to entertain your foreign friends.

This was an invited tasting, though all opinions expressed are our own.
