Food Review: Dew by Whitegrass At Chijmes, Cityhall | Casual Sake Bar Dining Concept Of Michelin Starred Whitegrass

The Place Located in Chijmes, I checked out the relatively new Dew by Whitegrass, the casual off-shoot of the Michelin starred Whitegrass restaurant. The restaurant is literally located adjacent to Whitegrass, and it exudes a casual and cosy dining vibe since the space is not that huge. I dropped by for dinner, but I can imagine the space is gorgeous in the day with ample natural light through the floor to ceiling glass panes. 

The restaurant only officially opened this month, though it has been in soft launch phase since July 2023.

The Food Expect European small plates with an Asian twist on the menu, where the restaurant also boasts a curated selection of approximately 65 sake labels sourced directly from different prefectures in Japan. Out of these 65 sake labels, over 40 boutique varieties are exclusively available at Dew. 

My meal started with the Pink Ocean (S$22), a duo platter of Chef Smoked The Salmon and Hamachi On The Way – House-smoked salmon with garlic aioli herbs and Shimane hamachi carpaccio with marinated daikon and olive soy sauce. 

Next up was the Cheese Choux Puff (S$10) with shredded parmigiano and black pepper. Not too much of a surprise here, I just thought that the cheese or black pepper element could be stepped up. 

More tapas bites in the form of Prosciutto On Brioche (S$15) where the black sesame brioche goes with prosciutto and stracciatella cheese; and the Unagi Meet Tamago (S$18) which features Hana tamago and house mayonnaise. 

On to something addictive – Potato Bombs (S$10). You can choose your choice of flavours for the potato fritters with a choice of Original or Anchovy or Curry. I had the anchovy and curry flavours which stayed true to its taste, best to go along with some sake! 

The Hokkaido Pearls (S$26) dish is basically scallop with pickled tartar and lemon garlic soy sauce. 

For something more substantial, the Yuzu Kosho Seaweed Pasta (S$20) would not go very wrong. The tagliatelle here is tossed with seaweed and yuzu pepper, topped with ikura and a choice of Salmon or Prosciutto. The pasta is quite creamy while the yuzu kosho element is quite well-balanced. 

For a meaty option on the menu, I had the “R” IGA Ribeye (S$58) which features roasted IGA wagyu A4 rib eye with sauteed spinach and wasabi. The IGA wagyu A4 rib eye from Mie prefecture is lightly seared, exclusively available only at Whitegrass and Dew by Whitegrass. You can have the beef on its own, or with the special house made sauce combining red wine jus and Japanese soy sauce, or with fresh wasabi. 

For desserts, expect the likes of “D” Little Kiss Cheesecake (S$12) where you get homemade cheesecake with red wine sauce, or the Nara Sake Kasu (S$8) which features Umenoyado sake ice cream with cacao crumbs and black pepper.  

There is also set lunch menu available at Dew by Whitegrass such as the Shiok! Oji Chick Don (S$28) where you get Shio koji marinated chicken with jalapeno atop Japanese Koshihikari rice. Each set lunch includes Otoshi and Salad of the Day. 

Rants There is a certain expectation when the restaurant is named Dew by Whitegrass as I couldn’t help but associate it with Whitegrass (unapologetically). Is this a decent modern Japanese sake bar concept? Yes. Is this close to Michelin standards? No. 

Will I Return Again? Dew by Whitegrass is like a modern Japanese sake bar with a focus on its sake varieties. The food is decent for a relatively casual meal in Chijmes to go along with some sake. Just don’t come expecting a Michelin standard meal.
