Bon Broth
One new exciting restaurant which just opened on level three of Raffles City beside Surrey Hills Grocer is Bon Broth, the latest and highly anticipated culinary venture from renowned Chef André Chiang which focuses on individual hotpot in collaboration with local F&B and lifestyle group Surrey Hill Holdings. The whole concept of Bon Broth is that it combines the finesse of French bone broths with the nourishing tradition of Chinese double-boiled soup.  And yes, no sauces and condiments required as the soup is good enough. Scarpetta
If there is one new pasta place which got me excited this year so far, it has to be Scarpetta. Located along the buzzing Amoy Street, this is a contemporary, sleek and cosy casual Italian restaurant which focuses on pasta. The kitchen is helmed by Chef Danny Ng, who was previously head chef at Bar Cicheti. The food menu is and elevated take on Italian food and is kept concise. It is split into toasts, starters, pastas and desserts. It is a sin to leave without trying the Spicy alla Vodka, baked rigatoni, tomato, chilli, fresh basil (S$21), a baked version of rigatoni with a crisp, slight charred texture on the edge of the rigatoni. [Read more here for our full review

Cavern Restaurant
Dining in a cave setting is definitely something novel in Singapore and here is a glimpse of Cavern Restaurant, Singapore’s first cave restaurant at Rainforest Wild ASIA managed by TungLok Group. Set to open on 12 March 2025, this is Singapore’s first and only restaurant in a cave setting where its location is part of a new attraction for Mandai Wildlife Reserve, Rainforest Wild ASIA, Singapore’s fifth wildlife park, and is inspired by Sarawak’s UNESCO-listed Mulu Cave. Expect a spacious 150-seater setting where the menu is a blend of international Western flavours. Sugarra
Taking over the space of what used to be Table65, Resorts World Sentosa has a new culinary destination: Sugarra, the first modern Basque and Spanish concept in Sentosa. Borrowing its name from the Basque word for ‘flame’, Sugarra is conceptualised by Chef Aitor Jeronimo Orive, who has previous stints in restaurants like The Fat Duck, Mugaritz and his very own Basque Kitchen by Aitor in Singapore. Expect classic Basque and Spanish flavours reimagined in a contemporary style. Only tastings menus are available where the Sugarra Experience Tasting Menu is presented as a 9-course meal priced at S$288++ per person. Two other shorter menus are available – the Discovery Tasting Menu of 4 courses for S$148++ per person and 6 courses for S$198++ per person. [Read more here for our full review

Nomada 
Located on Keong Saik Road, Nomada is a new modern Spanish restaurant helmed by Chef Gonzalo Landin who was previously the Executive Chef at Binomio. Expect a contemporary take on Spanish food where the menu revolves around sharing plates of starters, mains and desserts. The Foie Gras & Figs Rice (S$68), which comes with cubes of delicious foie gras on top of the crisp paella served on a huge iron pan, is one of my top picks. Tonshou 
Located on Tras Street in the heart of Tanjong Pagar, Tonshou is a new Japanese tonkatsu specialty restaurant which is run by the same group behind Seoul Noodle Shop. The interior of the shophouse restaurant is counter seating and it reminds me of those tonkatsu specialty restaurants in Tokyo, especially with the open kitchen and hooks on the wall to hang your jacket. Interestingly, the brand is not from Japan but hails from Busan, South Korea where there are four outlets currently. This is Tonshou’s first overseas outlet. The pork cutlet at Tonshou is charcoal-grilled and there are various cuts on its menu. [Read more here for our full review

Latido 
Located along Tras Street in Tanjong Pagar, Latido is a relatively new restaurant which focuses on Colombian cuisine. Helmed by Bogotá-born chef Fernando Arévalo (previously of Preludio and Bacata), it is also the only Colombian restaurant in Singapore with a relatively casual and accessible approach towards Colombian cuisine. The menu at Latido features a variety of traditional Colombian dishes with a modern twist categorized into snacks, starters, mains and dessert, even though you can also opt for the Chef’s Choice which is akin to a bespoke tasting menu. Prices are kept friendly, where most of the snacks and appetisers are below S$25. [Read more here for our full review

Sushi Muni 
Tucked away on level two of International Plaza in Tanjong Pagar, Sushi Muni (無二) is a new and intimate Japanese omakase restaurant with only ten seats. It is a minimalist setting with just counter seating, helmed by Head Chef with a focus on traditional Edomae sushi featuring wet-aged fish. Only set menus are available with lunch sets from a good value S$68++ which includes seven pieces of sushi and more, while dinner is from S$168++. Fu Hui Gen Tang
Located in Thye Hong Industrial Centre along Leng Kee Road, Fu Hui Gen Tang is a pretty interesting new concept to me. Founded in 1984 in Taiwan with six outlets across Taiwan, Fu Hui Gen Tang is the purveyor of traditional Chinese herbal super soup, the interior of the restaurant is spacious with two main dining halls, including tatami-style tables and two private rooms. Each soup is brewed using 50 carefully selected traditional Chinese herbs, brewed for over 24 hours using the time-honoured ”九蒸九晒” (nine steaming and nine sun-drying) method. Main benefits of their soup include rejuvenating, immunity-boosting, and detoxifying benefits. Opt for ala carte or set menu where the latter offers a better value for money. [Read more here for our full review

Buzzing Restaurants

New Chef & Menu At Ki-sho
Ki-sho (葵匠) is a kappou-style Japanese omakase restaurant. The name of the restaurant means ‘aristocratic craftsmanship,’ and is now helmed by new Head Chef Kawaii Hideki who brings with him over 30 years of experience in fine Japanese gastronomy. In this new year, Chef Hideki presents a signature kappou-style omakase featuring the seasonal ingredients from all over Japan. The 7-course lunch omakase menu starts from S$168++ while 8-course dinner is from S$168++. [Read more here for our full review
