Food Review: Moment Restaurant Singapore At Amoy Street | Western-Japanese Dining With Hinemos Sake

The Place Located at the buzzing Amoy Street, Moment Restaurant is a relatively a new dining concept a few doors down from pasta bar Scarpetta which offers a refined take on Western-Japanese cuisine, complemented by premium Hinemos sakes from Kanagawa. The interior of Moment Restaurant is a narrow shophouse layout with limited table seats and open concept counter seats with a view of the kitchen. The restaurant is run by a Japanese team and while the primary concept is to showcase their Hinemos sake, the team wanted a Western-Japanese food menu to complement the sake.

Other than Moment Restaurant, I also understand from the team that Hinemos sake is supplied to various fine-dining restaurants in Singapore. 

The Food The ala carte menu is varied and split into appetisers, cold plates, sides, mains and desserts. The menu is also useful in the sense that that each dish is also stated with a recommended type of Hinemos sake to pair with. In terms of what sake to go for, the sake menu is also organised into the different timings of the day.

For a start, I had the Shokupan (S$15) which is their Homemade Shio Koji Japanese Bread served with Nori Kombu Butter & Garlic Herb Butter. Can’t resist a good, freshly baked bread where this is soft and delicious. 

The Gambas Al Ajillo (S$20) is something easy to go with the sake and this version comes with Tiger Prawn, Garlic, Red Pepper Flakes, Espelette, Garlic Aioli and Furikake. 

From the cold plates, the Asian Hamachi Crudo (S$24) with Thinly Sliced Yellowtail in Cantonese Soy Dressing along with Scallions, Red Pepper and Sesame Oil is easy to resonate with if you love sashimi. 

For mains, the 2GR Wagyu Ichibo MB9+ (S$58) is a good protein to go for which uses GR Full Blood Wagyu Ichibo MB 9+ served with a side of Yagachi Island Salt and Confit Garlic. The beef flavour is rich and its texture tender.  

The other mains I tried was the Uni Cream (S$40) which sounds tacky but turned out to be quite good. You get Spaghetti pasta with Wild Caught French Scallop and Amaebi tossed in Fukui Uni Sauce, along with Garlic, Shallot, Tobiko and Ikura. The balance of the Uni sauce is just right.  

For dessert, I went for the simple sounding Nama Chocolate (S$8) which every chjocolate lover should go for. It is an intense and rich Valrhona Dark Chocolate 70% with Chantilly Cream and topped with some Awayuki Salt.  

Rants The dining space is quite tight, especially the table which could be a tad squeezy if more than one dish is served at the same time. Service could be more attentive too. 

Will I Return Again? Western-Japanese cuisine sounds tacky but I must say the dishes I had here are not too bad, not to mention the varied sake profiles from Hinemos. It is a small pity that the space is not big, which would not be that ideal for big groups.
