Food Review: Xing Yue Xuan (星粤轩) At Weave At Resorts World Sentosa | Jumbo Group’s Cantonese Dining Concept In Sentosa

The Place Located within Weave at Resorts World Sentosa, I checked out Xing Yue Xuan (星粤轩), a new Cantonese concept by Jumbo Group. Xing Yue Xuan is positioned as a premium dining destination if you are looking for a refined, seafood-forward experience. The interior of the restaurant is inspired by Chao Shan courtyard architecture, along with five intimate private dining rooms that accommodate from five to ten guests.

The name Xing Yue Xuan (星粤轩) represents the different facets of the restaurant “星” (xīng) – a homonym for Singapore’s “新” (xīn) and the symbol of a rising star, “粤” (yuè) to honour fine Cantonese cuisine, and “轩” (xuān) to reflect an elevated dining experience. The most striking feature of the restaurant’s interior for me is the hanging oversized lantern at the main dining area which is a symbolic festive icon from Teochew cultural values.

The Food In terms of the menu, you can expect handcrafted dim sum, Executive Set Lunch, and tasting menu with option for wine pairing.

The experience begins with an exquisite amuse-bouche for all guests, and it rotates where you can expect the likes of scallop and prawn salad nestled within a house-made kueh pie tee shell, or a jewel-like pickled cherry tomato. Each is paired with a ceremonial Honeycomb Ruby Tea.

From the à la carte menu, the Double-boiled Fish Maw Kampung Chicken Soup (S$38 per person) is one of my favourite dishes of the night. The soup is steamed for a few hours using old hen, pork, and chicken feet, before being concentrated through boiling. The final texture is one which is rich and creamy, which makes it very enjoyable. Premium fish maw, scallops, morel mushrooms, and wolfberries are added to the soup as well.

The Dong Po Pork Belly in Hakka Style (S$38 per person) comes with a bamboo leaf string where the staff will cut it upon serving. The pork belly is expectedly flavourful and the best part for me is the delicious soy-based sauce.

For fans of crustaceans, the Xing Yue Xuan Fuss-Free Crab (Half Crab) (S$78 per person) is a must-try. You can choose from three distinct preparations -signature black pepper version, the iconic award-winning chilli crab, or a steamed rendition with custard egg and caviar. I had the black pepper version which is very good I must say.

The best part if that the crab meat is all deshelled which makes it very easy to enjoy this dish. It also comes with a side of lettuce where you can have it with the black pepper crab meat.

The Flambéed Drunken Live Prawns (S$48 per portion, 300g) suits diners who love a tableside show where the prawns are flambéed in er guo tou (二锅头) baijiu and then simmered in a broth with goji berries and angelica root.

Expect fresh flavour of the prawns and the broth is served separately in a bowl as well which has a tinge of the wine and herbal notes.

For carbs, I had the Whole 3-head Abalone & Sea Cucumber in Fragrant Rice (S$68 per person) which is served in a sizzling hot stone pot. The rice is first wok-fried with a house-crafted soy blend before being topped with tender sea cucumber and a whole 3-head abalone. Overall, it is very fragrant and I enjoyed it.

For dessert, I had the Classic Chinese Duo Pastry Platter (S$16) which typically showcase of a rotating selection of heritage sweets.

Rants The good thing is this is probably the only fine Chinese restaurant in RWS compound for now. The challenge is to draw locals into the island to have a meal here, especially when Cantonese restaurants are aplenty in town area.

Will I Return Again? For a premium Chinese food experience in RWS, Xing Yue Xuan is worth trying. The space is elegant, and the dishes are generally quite competent, backed by the fact that it is under the Jumbo Group umbrella. It is also a plus that both ala carte and tasting menu selections are available which caters to different dining budgets as well.
