Food Review: Empire Grill At Raffles Sentosa Singapore | Modern Italian Restaurant By The Pool

The Place Located in Raffles Sentosa Singapore, I checked out Empire Grill recently, a modern Italian restaurant located beside the main swimming pool of the luxury resort. From the hotel’s entrance, the buggy service can bring diners to the restaurant or if you are familiar with the grounds, it is a short few minutes’ walk from the main hotel building, just a few steps away from where Royal China is located in the resort.   

By virtue of Empire Grill’s location, the setting and ambience here is a beautiful balance between relaxed sophistication and resort-style charm.

You can choose to dine indoors in a warm, rustic-Italian inspired space, or opt for the alfresco terrace by the pool. There are also two private dining rooms – The Chef’s Table and Palm Room.  

The Food The cuisine at Empire Grill leans into modern Italian and Tuscan wood-fire cuisine. Choose from their ala carte or set menu.  The beverage list is also quite comprehensive with a wide mix of red and white wines, along with champagne.

I had their Empire Grill Journey (S$198++) 5-course set menu and here is what to expect:  

Tuna Salad 
A refreshing salad with tuna and caviar to kickstart the meal. 

Hokkaido Abalone 
Next up is an interesting combination of scallop and abalone! I love the Pecorino & Comté Cheese Sauce and there is also Acquerello Rice Tart beneath which adds a nice texture to the dish. Topped with Dried Porcini as well. 

Spaghettini 
For pasta, it is a simple looking spaghetti topped with Anchovies and tossed in a Fontina Cheese Fondue Citrus sauce. The texture is al dente, and the flavour of the sauce is not too cheesy. 

Full-Blood Wagyu 
For mains, the Wagyu is paired with a Smoky Eggplant topped with Sweet Pumpkin Crème. It is a decent way to present the Wagyu beef, though I’m not very fond of the eggplant and pumpkin creme combination. 

Empire Grill Signature Tiramisu 
For dessert, the meal concluded with the classic tiramisu. 

Rants This is obviously not the most convenient restaurant to get to without a car. 

Will I Return Again? A destination dining of sorts, since it takes additional effort to get from if you are not a hotel guest. It is a relaxed setting, ideal for date nights as it is quite cosy and romantic in the evening, especially with the pool right beside the restaurant.
