What’s Buzzing? The French fine-dining restaurant at Raffles Singapore by three-Michelin-starred French Chef Anne-Sophie Pic spots a new Autumn Menu from 28 October. The new menu is a mix of the classic dishes, along with the seasonal Autumn creations.

What’s New? For a start, the Brown Crab from Brittany is seasoned with sobacha and served with geranium and tarragon ice cream. Light flavours overall, with fresh crab flavours complemented by the light herbal ice cream flavour.

The Turbot from Brittany is a stellar dish for me. It is served with Wakame mashed potatoes and a delicious mushroom dashi infused with yuzu and sumac.

For mains, a new option on the Autumn menu is the Poularde from Bresse. I decided to give this chicken a try, and it is indeed very flavourful as it is marinated with sake lees. It is also served along with roasted Jerusalem artichoke, Tsukudani along with Albufera sauce.

There are three dessert choices in the Experience menu for dinner, and Autumn’s addition is The Pear like a Vacherin. It is quite a light dessert after a heavy meal, and I was sold by the Earl Grey tea ice cream element here. Other key ingredients are the Swiss meringue and Pear Williams sorbet.

For cheese lovers, the Cheese trolley is quite enticing with a wide assortment of specially curated fine cheeses, available at an additional S$38++ per guest.

What’s Returning? Classic dishes like the Berlingots, one of the signature dishes of Chef Anne-Sophie Pic. The Autumn rendition is a beautiful combination of beetroot kombu broth infused with pu-er tea. For mains, the Saga Wagyu Beef is another familiar dish from the previous Summer menu.

The Autumn Menu is available for lunch and dinner, through the Experience (S$248++ per guest) and Elegance (S$338++ per guest) set menus.
