Food Scoops: Alma By Juan Amador Celebrates Its 6th Year With A Specially Curated Anniversary Menu
What’s Buzzing? One-Michelin starred restaurant Alma by Juan Amador Celebrates Its 6th Year with a Specially Curated Anniversary Menu which will be available from 1 to 30 September 2021. Choose between the special 5-course lunch & dinner menu (from 12 to 2:30pm, 6 to 10pm) at S$198++/pax, or the grand 8-course dinner menu (from 6 to 10pm) at S$298++/pax.
What To Expect? Start with some delicious snacks and warm bread from the team, the coffee meringue foie gras toast is definitely one of the signature snack and you will not look at Yakun kaya toast the same way again.
For the 5-course menu, the first course is Chef Amador’s classic Beurre Blanc, a French butter sauce ice-cream starter oyster and topped with Russian caviar.
The Swordfish ‘Toro’ is an aged swordfish belly sashimi, cured for three days in salt, sugar, lemon and an orange mixture.
Executed with classic French techniques, one of my favourite dishes is the King Crab which showcases steamed king crab as a blanc manger, made with the reduction of crab shells and paired with yellow wine from the Jura region of Vin Jaune in Eastern France. The dish is served with a mousseline of Japanese spring onion, and a sprinkling of fresh herbs comprising Thai sweet basil, Thai holy basil, lemon verbena, chervil, tarragon and seaweed powder.
The Mieral Pigeon is Chef’s Amador’s signature dish which features a tender pigeon breast topped with a crust of aromatic purple curry and paired with coconut puree, diced fresh mangoes and pigeon jus.
For dessert, I had Musk Melon with elderflower and lychee.
