Food Review: Sézanne At Four Seasons Hotel Tokyo at Marunouchi | Michelin Starred French Restaurant And Asia’s 50 Best Restaurant

The Place Located on the 7th floor of Four Seasons Hotel Tokyo at Marunouchi, I checked out the One Michelin starred restaurant Sézanne in my Tokyo trip this year for the first time where the contemporary French restaurant was also accorded Number One spot on the Asia’s 50 Best Restaurants 2024. 

Upon entering the restaurant, there is a spacious holding area for diners to wait for their table to be ready. One point to note is the formal dress code where guys are expected to don a jacket. The interior of the restaurant is elegant, and it boasts a nice natural light in the day, designed by award winning interior designer/architect André Fu from Hong Kong.

The dining ambience is quite formal, and each table can also catch a glimpse of the open kitchen through the transparent glass window. 

Sézanne is currently helmed by Executive Chef Daniel Calvert who has a solid repertoire of culinary stints which include the likes of three Michelin starred Per Se in New York City, and Epicure at Le Bristol in Paris 

The Food I visited during lunch and had the Menu Du Jour (JPY 22,000, JPY 27,830 inclusive of taxes and service charge) which is quite good value. That said, this menu is only available on weekdays only (Not available on weekends & public holidays). 

Here is what to expect: 

48 Month Aged Comte Cheese Gougere 
An amuse bouche for a start where I had this mini cheese ball which is a burst of flavours. 

Shima Ebi Marinated In Vin Jaune 
The first course features a Shrimp tart which uses fresh Hokkaido ebi from Hokkaido along with wine jelly. Very clean and somewhat refreshing start to the meal. 

Akkeshi Oyster “En Gelee” 
An interesting way to present oyster in a jelly and cream style.  

Jelly Fish “Nicoise” With Olives And Anchovies 
I thought this is quite an interesting course since jellyfish is not something I come across often. The overall dish is very well-balanced where you do not get too much of the anchovies or olive oil elements in your face. 

Malted Barley Sourdough With Brittany Butter 
Next up I had some fresh bread which goes with the delicious butter from Brittany. 

Hokkaido Scallop With Sweet Corn From Yamanashi Prefecture And Smoked Pimenton 
This is one of my favourite courses where the scallops here were grilled to perfection. The interesting bit about this dish is that the scallops are enclosed in a Tuile biscuit and it goes with creamy and delicious corn along with spinach as well as red pepper sauce.

I must say corn is one of the most underrated ingredients which works wonders with most dishes. 

Mizu Nasu From Osaka With Iberico Ham And Extra Virgin Olive Oil 
This dish looks very minimalist. It features a water eggplant from Osaka called mizu nasu where you get the grilled eggplant puree and Iberico ham.  

Shiranuka Venison With Hokkaido Asparagus And Lardo Di Colonnata 
For mains, I must say I enjoyed this venison dish even though it is not my usual preference of red meat. The venison is grilled to a nice texture, and it goes well with the mild Dijon mustard sauce.

There are also Kagoshima Asparagus, Hokkaido Potato and white sourdough bread by the side which you can soak up the jus with. 

Sauternes Ice Cream With Saffron From Saga  

Miyazaki Mango With Shortbread “Crème Chantilly” 
The final dessert is this fresh and beautiful Miyazaki Mango which is surprisingly not too sweet. 

Mignardises 
Last but not least, some mignardises to conclude the meal and you can have it with either complimentary coffee or tea. 

Rants The alcohol options are quite pricey.

Will I Return Again? The service at Sézanne is professional and I was lucky to meet the friendly Chef Daniel as well. Another instance of the good service is that the staff offered to loan their blazers to me as I had forgotten about the need to don a jacket. If you love French fine-dining cuisine with Japanese ingredients and flavours, then this is one restaurant to check out. The weekday lunch offers one of the best values in my opinion from the Tokyo fine-dining scene.
