Food Review: People People Brewing Co. At Resorts World Sentosa | Microbrewery With Wood-Fired Food By Burnt Ends Team 

The Place One of the newest dining concepts to anchor down at WEAVE in Resorts World Sentosa is none other than People People Brewing Co. by Burnt Ends Hospitality Group. Spanning a massive 9,000 square feet, this sprawling social hall is a collaboration between chef-owner Dave Pynt of the one-Michelin-starred Burnt Ends, Loh Lik Peng of Unlisted Collection, and hospitality veterans Pete Thew and Jason Moy. 

The space is a hybrid of industrial, working microbrewery and an approachable, family-friendly hangout. Anchored by five giant 1,500-litre custom brewing tanks that pump fresh craft beer straight to the custom taps, the vibe here is casual and unpretentious, and it reminds me of the beer halls in Europe, complete with retro arcade machines, a stage for live music, and sports screenings. 

The Food The culinary direction here focuses on wood-fired cooking with casual gastropub dishes like wood-fired sourdough pizzas, starters, and burgers. 

I started with the Salt and Pepper Squid (S$16), a highly addictive bar bite featuring a crisp, golden exterior; and the mildly spicy Swordfish Tacos (S$18) which comes in three portions. 

For mains, the star of the show has to be the Blackmores’ Giant Burger (S$58). This is quite a monster of a burger as it features a mountain of beef short rib stacked over double Wagyu patties, crowned with fried onion rings and sandwiched between potato buns. The short rib boasts a wood-fired char while the patties are packed with beefy depth. 

The other highlight on the menu is the Signature Rotisserie Chicken (from S$16 for quarter chicken) is cooked over the open flames where the chicken is succulent. My only minor rant is that I expected a slightly smokier flavour profile in the meat. Served with fries. 

From the wood-fired oven, the Pulled Pork Sanger Pizza (S$32) features a sourdough base. Topped with slow-pulled pork, chipotle, mozzarella, and jalapeños, the size of the pizza is enormous and can eadily feed 3-4 pax.  

Of course, beer is a big highlight here, helmed by Head Brewer Nick Calder-Scholes. Poured in wine glasses for half-pints, the core lineup focuses on cleaner and balanced flavour profiles. 

Go for the Beer Flights (S$20, 5 x 100ml tasters) if you are undecided on which flavour to try.  

Rants Being situated in Sentosa means it takes a conscious effort to travel down for a casual pint, though the direct drop-off at WEAVE and waived island entry fees cushions the blow. Some dishes run heavy on richness, so pacing your order is highly recommended. 

Will I Return Again? A good addition to the Sentosa dining scene that moves away from overly stiff upscale concepts. A high-energy spot for large group gatherings if you want something easy and casual, and of course, a must visit if you are a beer lover.
