Food Review: Whuchu Korean Dining At UE Square | Fresh Ssam-Bap Experience And Himalayan Salt-Aged Jeju Pork In Robertson Quay

The Place The team behind Gochu, Song Gye Ok, and Modu has expanded their footprint to the River Valley enclave with Whuchu Korean Dining. Located on the ground-floor unit at UE Square along Clemenceau Avenue, the few months old Korean restaurant features an interior which draws inspiration from hwangto — a traditional Korean yellow clay — featuring warm wood textures, straw motifs, and soft lighting that convey a modern yet cosy Hanok vibe. 

The centerpiece of the dining room is Singapore’s very first Himalayan salt-ageing room. Enclosed in clear glass and lined entirely with glowing pink salt bricks, it stands in the middle of the restaurant, putting their dry-ageing process on full display. 

The Food Whuchu operates on a dual-concept format: a wellness-focused Ssambap (Korean wrap rice) menu for lunch, which transitions into a Korean Barbecue experience for dinner. 

I visited for dinner where one highlight is their 100% certified Jeju pork, which undergoes a wet-and-dry ageing method inside the salt room to concentrate its natural rich flavors. 

I had their Signature Set Menu (S$188++, 2 to 3 pax). While a la carte ordering easily pushes your bill past the S$200 mark, this set is pretty good value as it bundles the salt-aged meats alongside starters and a stew dish, a side dish and dessert. Another noteworthy point is that the staff does all the tableside grilling. At S$188++, you get substantial meat portions (700g of premium beef and pork combined) plus sides and dessert. 

For the meats, I get to choose a dual-protein showcase consisting of LA Galbi Beef (400g) and their famous Aged Pork Collar (300g). The pork collar is sliced thick, retaining a beautiful marbling that renders brilliantly over the open fire. Thanks to the salt-dry-ageing process, the pork boasts a concentrated flavor profile and tender texture. 

Meanwhile, the premium LA Galbi ribs are steeped in a beautiful, sweet soy blend which gives it a flavourful profile. 

For stew, I had their Beef Soybean Tofu Stew which arrives bubbling hot. It is a spicy punch, too spicy for me to enjoy. Unfortunately, the beef slices and tofu are not that big in portions as well.   

For sides, I had the Minari Pancake (S$16) which features crisp seasonal water parsley, though the taste is on the bland side. 

For dessert, diners can proceed to the Tofu G gelato stand outside the restaurant to claim two cups of gelato, where flavours include the likes of pistachio and black sesame amongst others. 

Rants Some hits and misses in terms of flavours for me.   

Will I Return Again? Overall, the meats fared well for me, in particular the Jeju pork. It is a pleasant setting to enjoy Korean Barbecue especially with the tableside service by the staff, though price is on the higher end especially if you go a la carte.
