Food Review: Tanica At The Singapore Edition | Modern Asian Concept Which Replaces Fysh
The Place Located at The Singapore Edition is a new dining concept. Meet Tanica, the hotel’s new flagship restaurant which replaces Fysh. There is no change to the grandeur of the botanical themed interior where the Modern Asian restaurant focuses on the flavours of the region where dishes are shaped by the interplay of herbs, spices, technique, and fire.

The name Tanica brings together “botanical” and “tannins” in its name, and the idea is that it reflects the connection to the natural world.

The Food The menu features dishes that are herbaceous, spice-forward and fire-driven where the kitchen channels live flame across the wok and Josper grill. Sharing sits at the heart of the Modern Asian menu, while its culinary philosophy focuses on regional sourcing, seasonality, and responsible use of ingredients.
If you work in the vicinity, there is a weekday set lunch from S$48++. As for dinner, it is an ala carte menu format where dishes are designed around snacks, starters, mains, sides and dessert.
I started with the Chicken Rendang Puff (S$14) which is easy to resonate as it is a take on local curry puff, except that this is filled with Roasted Garlic Yogurt and Curry Leaf Oil within.

For starters, the Little Joe Grass-Fed Beef Tartare (S$28) is a delightful dish where the beef tartare is well-balanced with Green Papaya, Smoked Soy, Confit Egg Yolk Aioli, Crispy Shallot and Fish Sauce.

A lighter option would be the Salad of Jicama & Pineapple (S$22) with Bamboo Heart, Cucumber and a bright Tamarind Dressing.

For mains, I went for their “Iga Bakar Kicap” 72-Hour Wagyu Beef Short Rib (S$58), a generous portion of tender beef in Sweet Soy Sauce, Sambal Embe, Herb Salad and Crispy Garlic. It is a robust flavour, so I recommend sharing between 2-3 pax as it does get quite heavy after a few slices.

Alternatively, a lighter option for mains is their 200g Black Sambal Murray Cod (S$58) with Onion & Kaffir Lime Salad. This reminds of our local Singaporean sambal fish, but it is not too spicy to handle.

Sides options to complement the mains include Farm Leaves (S$12) with Calamansi Shallot Dressing, and a fresh and refreshing Salad of Ox Heart Tomato (S$12) with Calamansi & Basil Vinaigrette. The tomato comes in big and thick slices, something nice to have after the heavy flavours of the meats.
For desserts, I tried their Fragrant Pandan which is a Pandan Roll Cake with Caramelised Coconut, Soursop & Kaffir Lime Sorbet; and the Kuantan Chocolate & Pisang Emas which is a rich and satisfying 70% Dark Chocolate Mousse with Gula Melaka Banana Compote and Cocoa Nib Streusel.

Rants There is no private dining room in the big restaurant space which is quite a pity.
Will I Return Again? It is a nice dining ambience where the menu at Tanica is much more diverse as compared to when it was Fysh. Prices are also not too crazy given the setting and location, and the space is ideal for couples or bigger groups if you are looking for a gathering spot in town.
