Snippets: Jade restaurant at The Fullerton Hotel Singapore | A Culinary Feast of Two Cities
What: From 2 to 8 November at The Fullerton Hotel Singapore, Executive Chef Lai Ching-Shing of One Michelin Star Cantonese restaurant YUÈ at City Garden Hotel, Hong Kong, will collaborate with Jade restaurant’s Master Chef Leong Chee Yeng to bring together ‘A Culinary Feast of Two Cities’. The dishes are available from the a la carte and set dinner menus.
Culinary Highlights: Award-winning creations from Michelin-star Chef Lai include the Chilled Fresh Abalone with Chinese Wine, Cherry Tomatoes in Pomelo Vinegar, Fragrant Fried Rice with Prawns, Barbecued Pork, Diced Vegetables in X.O Sauce and Steamed Minced Pork with Foie Gras and Scallops, which garnered the Gold with Distinction Award in Hong Kong Tourism Board – Best of the Best Culinary Awards in both 2010 and 2015, considered as the oldest and most reputable award in the catering and dining industry in Hong Kong.
Chef Leong will present a ‘Nanyang’ inspired menu, with highlights such as Stir-fried Sliced Garoupa with Truffle Egg White accompanied with Superior Fish Maw Broth, Poached Salt Water Chicken and Shaved Coconut Ice with Mango. How much: ‘A Culinary Feast of Two Cities’ is available in a la carte menu, from $10++ per person. The Six-Course Set Dinner Menus which features a choice of selection from Chef Lai and Chef Leong’s creations at $98++ and $118++ per person.
