Food Review: Sushi Hare At CHIJMES | Excellent Japanese Omakase By Chef Angus Chang

The Place Previously located along Stanley Street, I checked out Sushi Hare recently which has now moved to CHIJMES in Cityhall. Helmed by Chef Angus Chang from Taiwan, the word “Hare” (晴) refers to clear skies where the Japanese omakase restaurant’s theme is shaped by the Shokunin spirit and the renowned hospitality of Taiwan. 

The Kumiko exterior is a reflection of Hare’s vision of calmness, immersion, and sensory stillness, while the main dining area takes on a traditional Japanese aesthetic.

I love how calm and zen the ambience is, where the centrepiece is a 7-metre Hinoki counter which was custom-crafted in Japan. 

The Food Opened for lunch and dinner, the menu at Sushi Hare starts from S$160 (HIKARI Menu) where you get an Appetizer, Chawanmushi, 9 Pieces of Nigiri, Hand Roll, Soup, and Dessert. For dinner, the AO Menu is priced at S$380++ per person and if you want to go luxurious, there is also the bespoke HARE Menu (from S$500++) which requires reservation at least one week in advance. 

I had their 日HI Menu (S$250) for lunch which includes 5 Seasonal Appetizers, 10 Pieces of Nigiri, Hand Roll, Soup, and Dessert. 

Here is what to expect from the 日HI Menu I had: 

Kinmedai Shabu-style with ponzu sauce 

Hokkaido Sweet Corn with dashi jelly 

Isaki (grunt fish) 
The isaki is wrapped with Uni and topped with Uni sauce. 

Smoked Beltfish with onion sauce 

Iwashi (sardine) Maki 

Nigiris 
Next up is the series of Nigiris.

I really love the shari Chef Augus uses for his nigiris. He switches between white vinegar rice and red vinegar rice to complement the type of fish used, and the balance is just right for each nigiri course I had.

Shima Aji (striped jacket) 

Kamasu (Barracuda) 

Hokkigai (surf clam) 

Akami 

Saba wrapped with seaweed 

Kamatoro (tuna cheek) 
There is no otoro served in the menu but I fully appreciate the Kamatoro which has the fatty texture of otoro, but slightly less cloying. It is delicious. 

Shiro-ebi topped with Murasaki Uni 

Ankimo 

Nodoguro 
One of my favourite fishes. This is lightly grilled over charcoal until semi-done, and you get the richness of the fish melting in your mouth.

Dessert 
Homemade Warabi Mochi and Black Sesame Ice cream Monaka concludes the meal.

Will I Return Again? If I were to describe Chef Angus’s style, he impresses me with the clean flavours of each course by allowing the ingredients to shine on its own. There is no fancy showmanship, but the flavours are on point such that I just kept looking forward to the next fish. The entry level lunch menu is a good starting point into this excellent sushiya.
