A two-Michelin-starred Japanese omakase located at One Fullerton, Singapore, Shoukouwa specialises in Edomae-style sushi. It flies its seasonal seafood and ingredients directly from Tokyo’s famous markets daily where every piece of sushi is meticulously crafted with precise vinegared rice proportions, ideal serving temperatures, and flawless knife techniques. Sushi Hare
Previously located along Stanley Street, Sushi Hare has now moved to CHIJMES in Cityhall. Helmed by Chef Angus Chang from Taiwan, the Kumiko exterior of Sushi Hare is a reflection of Hare’s vision of calmness, immersion, and sensory stillness, while the main dining area takes on a traditional Japanese aesthetic. Opened for lunch and dinner, the menu at Sushi Hare starts from S$160 (HIKARI Menu) where you get an Appetizer, Chawanmushi, 9 Pieces of Nigiri, Hand Roll, Soup, and Dessert. For dinner, the AO Menu is priced at S$380++ per person and if you want to go luxurious, there is also the bespoke HARE Menu (from S$500++) which requires reservation at least one week in advance. Firebird by Suetomi
Firebird by Suetomi is a partnership of Singapore-based Ebb & Flow Group with celebrated Tokyoite chef and serial restaurateur Makoto Suetomi which just opened at Mondrian Singapore. It is the first overseas offshoot of the famed yakitori restaurant, Makitori Shinkobe, which boasts a one-year waiting list in Japan. The concept of Firebird is an intimate tori-focused wood-fire omakase, where the spotlight is on showcasing meticulously sourced chicken and seasonal ingredients prepared with techniques ranging from grilling to roasting, sautéing and smoking. Kisho
Located along Scotts Road, Ki-sho 葵匠 is an eleven-seater kappo-style omakase restaurant which is now helmed by Chef Taro Takayama. It is a revamped space after Chef Taro joined the team and now spots a sleek and elegant dark theme interior. Courses start from S$160 for a 6-course lunch. This includes a seasonal appetiser platter, seasonal sashimi, choice of main (fish or add-on S$30 for beef), donabe rice, and two desserts. The more luxurious 7-course menu is at S$280, available for both lunch and dinner. Tentsuru
Located at level two of The St. Regis Singapore, Tentsuru is a tempura centric Japanese Omakase restaurant in Singapore which has been opened for slightly over a year. There are not many tempura focused Omakase restaurants in Singapore, and I really like the space of Tentsuru from its entrance to the interior of the space. Most ingredients are air-flown from Japan, where Master Chef Daiki Kawaguchi presents elegant seasonal dishes that bring out the maximum umami. The restaurant does lunch and dinner Omakase menus, where lunch is at S$120++ or S$240++ per person, while dinner is at S$280++ or S$400++ per person. [Read more here for our full review]

Mid-range
Toriei
Hidden away on Level 4 of Cuppage Plaza, Toriei is a new slick, intimate 10-seater yakitori omakase restaurant by Chef Roy Koh who also runs Skewers a few doors down. As opposed to Skewers which does an ala carte menu in a casual setting. Toriei targets a more premium and upscale dining experience with only an omakase menu. The space is exclusive as there is only a counter-only setup, where diners get up close to all the action right in front of you as the chef works the charcoal grill. Kappo Suguro
Located along 192 Joo Chiat Road, Kappo Suguru is a relatively new Japanese dining concept by the team behind the home-dining brand Suguru Home Dining. This shophouse space runs two concepts – Kappo Suguru from Sunday to Tuesday, and Suguru Sushiya for the rest of the week. It is a cosy counter seating layout with a direct front-row view of the chefs executing traditional kappo techniques. Sushi Kawasemi
Located in Telok Ayer Street is two months old Japanese Omakase restaurant, Sushi Kawasemi, which is a zen retreat from the hustle and bustle of CBD. The interior of Sushi Kawasemi is denominated by a long counter seating in wooden furnishings and is helmed by Chef Sam who has over a decade of experience (previously at Ashino), where his forte is traditional edomae-style sushi as reflected in their use of the age-old technique, Shinkei-jime. Sushi Tenrai
Located along Pickering Street is a relatively new Japanese omakase restaurant Sushi Tenrai which serves up omakase menus from just S$38++. It is a simple and no-frills setting, a cosy space with wooden counter seating and an open kitchen. The restaurant is located in the CBD region of Singapore which makes it accessible for the office crowd in the vicinity. Sushi Tenrai imports fresh ingredients from Japan a few times weekly, and the focus here is on sushi omakase with a contemporary twist in terms of the garnish or marination of the fishes featured. Sushidan
15-course Edomae-style Omakase from S$98++ in Raffles City? Sign me up! A hidden private dining omakase experience discreetly concealed behind Sushidan’s main dining room, advance reservation is required and there are only six seats. The experience is helmed by Chef Yusuke Kawana, a Tokyo-trained sushi master with more than 28 years of experience in Edomae sushi. Expect appetisers, sashimi, sushi, a hot dish, grilled dish, handroll and dessert. You can also opt for premium seasonal menus priced at S$138++ and S$238++.

Sapoto
A yakitori omakase spot in Tanjong Pagar, Sapoto is located at level two of Amara Hotel in Tanjong Pagar and is helmed by the former head chef of the popular Shirokane Tori-Tama, and is by the same team behind Sushi Yujo and Shinrai. Sapoto offers good value menus, with lunch omakase starting from just S$48 and dinner from S$98. The menu goes by omakase set menus where you can expect dishes like chutoro carpaccio, uni truffle brioche, truffle chawanmushi, and more. That said, the highlight is still the yakitori, with skewers like chicken thigh with leek, innards, crispy tebasaki, tsukune dipped in creamy egg yolk, and more. [Read more here for our full review]
