Food Scoops: One-Michelin Starred Restaurant JAG Spots A New Autumn Menu By Chef Jeremy Gillion

What’s Buzzing? The One-Michelin starred restaurant at Duxton Road Restaurant JAG spots a new Autumn Menu, and it extends the herb driven cuisine by Chef Jeremy. Interestingly, JAG is an acronym for Jeremy Anant Gastronomy, where it is a partnership between Chef Jeremy and restaurateur Anant Tyagi.

What To Expect? The dishes are inspired from the use of Savoie herbs infused with Asian produce, complemented by seasonal vegetables which drive the direction of the final dishes presented.

Highlight Autumn creations from Chef Jeremy include:

  • Sapin, Latour Beetroots, Singapore Langouste
  • Hysope, French Muscat Pumpkin, Frog (also from Singapore) and
  • Carvi, Latour Rutabaga, Oysters.
  • Serpolet, Parsley, Pigeon
  • Agastach, Sunchoke, Arctic Char

I personally love the Arctic Char dish, and the Singapore Langouste which took me by surprise by how delicious our locally farmed lobsters can be.


The style of each dish is very pronounced, driven first by the type of herb to use, followed by the vegetable to pair with, and finally the choice of protein.

The Opulent Indulgence Menu is priced at S$223++ per person, which is similar to an omakase experience. Wine Pairing is at S$198++ per person.
