Food Review: Borderless Brunch at Grand Copthorne Waterfront Hotel | Bringing TEMPO to the Food Capital and Grissini

The Place We just visited Grissini a fortnight back and was told of the launch of the Borderless Brunch at Grand Copthorne Waterfront Hotel, combing all their 3 new dining concepts, Food Capital, Tempo and Grissini into one large Sunday Brunch party – we knew for sure this is one brunch we must check out. Having closed their previous concepts including Cafe Brio and Pontini, with the hotel underwent a major revamp over the last couple of months, the new dining concepts opened earlier in June this year. Taking on a modern-meet-industrial chic vibe, with daring use of colours to spruce up the place, this is a revamp which we found absolutely stunning. The Millennium & Copthorne group might have just found themselves a deserving flagship hotel for the brand here in Singapore.

The Food It is borderless, which will see you enjoying the large international buffet spread at Food Capital, the drinks at Tempo and the Italian fare options at Grissini. More than that though, is the high quality food at each of these concepts, at a affordable price of S$98++ per pax. You also have the option of topping it up with an additional S$40++ to get yourself free-flow Perrier Jouet Champagne and other alcoholic beverages.

Starting from Food Capital, you can choose to start your Sunday with the western delights such as the carving station which features highlights like the Beef Short Ribs and Barbecue Pork Ribs, and if you fancy, a live Foie Gras station as well.

Moving clockwise will lead you to the local Chinese and Indian food selections, with our top recommendation being their Laksa – trust us, the laksa broth was sedap! No calories to be wasted in a buffet.

In the middle of the buffet line at Food Capital, you will get your usual Japanese selections, like the fresh sashimi cuts. Located right beside the Japanese counter is the seafood corner, where we spotted oysters, mussels, and a wide selection of Crustacean choices.

Moving on to Tempo, you get to enjoy your choice of beverages should you choose to top it up, including the likes of Perrier-Jouët Champagne, Desperados Tequila Beer and Ciders. Or you can simply stick to the basics, and enjoy the free flow slush – with the Ribena and Fanta Orange flavours on tap during our visit. The drawbacks here for us are the missing signature cocktails of Tempo, which we would  gladly exchange for the beers anytime.

Moving over to Grissini, our favourite part of the brunch, there is a wide range of antipasti selections to start. The live pasta station, where we enjoyed our Lobster Linguine prepared a la minute, and the freshly baked pizzas, are just some of the must trys here.

The must-visit portion of the Sunday Brunch is definitely the Josper Grill station located outdoors at Grissini. We were pleasantly surprised that the hotel has included this station as part of the spread, with the grills being our favourites when we dined at Grissini earlier. The juicy Grade 8 Wagyu Beef, well-grilled and chewy Octopus, and the Tiger Prawns are the die-die must try grills. The Josper Grill allows the juiciness of the meats to be retained, yet giving us the crisp texture of the meats on the outside.

Alas, desserts were a far cry from the savoury items. You can pretty much imagine chocolate fondue, average Peranakan kuehs and mediocre ice-cream. That said, there is a cheese garden which is quite a looker.

Rants Even the best food and ambience will not do any good without good service. And it doesn’t help when the less than pleasant service we encountered was dished out not by the worker bees, but by the managers at the restaurants. Distasteful.

Will I Return Again? With a large seating capacity, and an extensive buffet spread, this is by far one of the more enjoyable Sunday Brunches we had in recent months without breaking the bank. That said, our rants may get the better of us.
