Food Review: Soufflé at Duxton Hill | Savoury Souffles with Lobster Bisque and local Laksa [Closed]

The Place I was drawn to the idea of a specialty soufflé restaurant, hence my visit to Soufflé at Duxton Hill. This is apparently the first French restaurant in Singapore which specialises in soufflés and casseroles dishes, managed by the Deliciae Hospitality Management (DHM) group which also owns the multi-concept dining at Robinsons The Heeren. Soufflé is located right beside Xiao Ya Tou and Xin Divine, with a chic blue and white interior along with Parisian inspired murals. The setting is not that formal yet not overly casual, which makes it ideal for a casual date night or brunch with friends.


The Food It is not all about soufflés, though that is the highlight at Soufflé where there is a good mix of savoury and sweet soufflés on the menu. Other non-soufflé starters include the likes of foie gras terrine, French onion soup and escargot.

I zoomed in to the savoury soufflés immediately. The first I had was the Lobster (S$28) soufflé, which comes with a small bowl of lobster bisque. It takes about 20 minutes of preparation for each order, and what arrived on the table is a relatively small portion of soufflé. The texture is of the souffle is soft and pillowy, topped with a thick lobster claw meat. Flavour wise, it could be a little dry on its own, so go generous by adding the whole lobster bisque portion into the souffle and mix it well. There are also tiny bits of lobster meat in the lobster bisque soup, which is rich and flavourful enough for me.

The other dish I had was the locally inspired Laksa (S$26) souffle. It comes with fresh prawns within the souffle, and a laksa broth which is authentic enough. Similar to the lobster version, I would recommend pouring the laksa broth into the souffle.


Rants Prices are relatively steep for the small portions. We are guessing that your guy friends would complain and rant that they are not filled by one portion of the souffle.

Will I Return Again? Souffle is an interesting concept, at least in Singapore’s dining context. Some of the flavours are unique, and I also like that the menu has other dishes other than its namesake. It would definitely be better if the portions could be bigger.
