Food Review: Riviera At One Fullerton | Contemporary Mediterranean And European Restaurant With Gorgeous Marina Bay Waterfront Dining View

The Place This is easily one of the best dining views in Singapore. I visited Riviera recently for dinner, a contemporary Mediterranean and European restaurant located at One Fullerton. The interior of Riviera is elegant where every table gets a view of Singapore’s skyline and some of the most iconic landmarks in the city such as the Merlion in close proximity, Marina Bay Sands, Esplanade, Singapore Flyer, and essentially the whole Marina Bay waterfront.  

The best seats in the house are definitely the tables right beside the window. 

The Food The restaurant refreshed its menu recently with their newly appointed Executive Chef Yvan Yin. You can expect a refreshed menu that represents a bold reimagining of contemporary Mediterranean cuisine, enriched with the distinctive flavors of Asia. Apart from ala carte options, there is also an omakase dinner menu. 

I went for the ala carte menu and my meal started with some complimentary bread and amuse-bouche.  

For a start, the Hamachi Carpaccio (S$48) features cured Hamachi fish lion with Kaluga Queen Caviar Yuzu Ponzu, Pickles and Sicilian Pistachio. I love the thinly sliced fish which has a refreshing flavour, along with added texture from the delicious pistachio nuts.  

The other starter I tried was the Mushroom Dumplings (S$28) where the seasonal mushroom is wrapped with Beijing Cabbage in a water chestnut edamame sauce along with coconut and blue ginger. While there are quite a couple of ingredients going on here, I do find the flavour of the mushroom dumpling itself quite bland.  

For soup, there are two options on the menu – Forest Mushrooms Velouté (S$28) or the Lobster Bisque (S$28). The best part about the Mushrooms Velouté topped with seasonal truffle is the puff pastry which covers the soup. The mushroom soup is rich, and that crispy and buttery puff pastry is good on its own, or you can dip it into the soup and enjoy it together.  

The Lobster Bisque is a safe option as well, where you get butter poached lobster tail along with smoked caviar and some fine herbs.  

For mains, I went for the Sea Urchin Linguine (S$58) where the pasta is tossed in creamy Charred Corn Cream sauce topped with generous servings of Sea Urchin and Salmon Roe.

I also had the Wagyu Beef (S$88) priced at a premium price, which uses Snow-Aged Juku Wagyu Beef Sirloin. As expected, the beef is succulent in flavour and is well-marbled, served with some Ratte Potatoes and Sarawak Pepper Sauce to go with the beef.  

For desserts, go for the Chocolate (S$18) which comes with an intensely rich Valrhona 64% Chocolate, Almond Dacquoise, Hazelnut Praline and Cacao Sorbet.

A lighter but delicious alternative would be the Corn (S$18) with Sweet Corn Cremuex, Buck Wheat Gavotte Miso & Dulcey Ice Cream with Burnt Corn Husks Meringue. 

Rants Prices are on the higher end for most of the dishes on the ala carte menu.  

Will I Return Again? For tourists, Riviera is one of the best dining spots to enjoy a view of Singapore over a meal. Prices are on the higher end for the ala carte menu since you are also paying for the splendid city view.
