What’s Buzzing? The One-Michelin starred restaurant at Duxton Road Restaurant JAG spots a new Autumn Menu, and it extends the herb driven cuisine by Chef Jeremy.
The new Autumn Menu features the Journey Degustation Dinner Experience where the new luxurious 8-Expressions menu includes three canapés, fresh bread basket, amuse bouche, Savoie vegetable-herb tea, palate refresher and seasonal mignardises offerings.
What To Expect? Chef Jeremy has sourced luxurious selection of mushrooms, root vegetables from the Latour region of France such as salsify, celeriac, rutabaga, chiogga and yellow beetroot – ingredients still unfamiliar to Singapore diners. Each dish is a delicious, light and surprising work of art.
The menu at Jag is curated by having a vegetable in mind first, followed by the herb, then a protein.
Highlight Autumn creations from Chef Jeremy include:
- Kohlrubi, Melisse, Prawn
- Jerusalem Artichoke, Suriette, Caviar
- Pumpkin, Surreau, Foie Gras
- Yacon, Sage, Langoustine
- Salsify, Aubepine, Quail
I particularly enjoyed the Jerusalem artichoke topped with caviar and drizzled with artichoke sauce.
The True JAG Omakase Experience is priced at S$298++ per person, where the cuisine is focussed strongly on wild-foraged herbs of Savoie, France along with the vegetables of the season. Wine Pairing is at S$248++ per person.
