Food Review: Fireplace By Bedrock At One Holland Village | Open Wood-Fired Grill Concept With More Than Just Steaks

The Place Opened last December in the new One Holland Village as Ginkyo By Kinki, I checked out the newly opened Fireplace by Bedrock, an extension of the Bedrock brand with a focus on open-fire cooking. The space of Fireplace is spacious with a main dining room as well as a pet-friendly, 34-seat shaded outdoor terrace. The dining ambience of Fireplace is more relaxed vibe as compared to Bedrock, where you can expect light timber tabletops, leather chairs and a caramel leatherette banquette seating.  

All seats at the main dining room offer a view of the chefs at work at the open wood-fire grill. For bigger groups, there is also a 8-seater semi-private dining area towards the back of the restaurant separated by a metal mesh curtain. 

The Food With an emphasis on open wood-fired grill concept, the menu is a varied mix of meats, fish, and fresh produce where the kitchen is helmed by Chef Victor Ng. 

For appetisers, I started with the oven-baked Bone Marrow Toast (S$28) which is served on a house-made toasted brioche topped with pickled shallots, capers, parsley, and caramelised onions. 

The refreshing Watermelon Salad (S$15) is a crowd’s favourite which comes with cubes of fresh watermelon with red onions, cucumbers, toasted pinenuts, feta cheese, and coriander. 

Another sharing dish I had was the Octopus Tentacles (S$28) where the tentacle is served with a housemade coriander pesto sauce made with coriander, parmesan cheese, garlic, pinenuts and olive oil. The dish is garnished with celery cress and sprinkled with Togarashi (Japanese 7-spice blend). 

For mains, the Dirty Duck (S$52) is quite a different rendition of duck where the dish uses an Irish duck rubbed with a medley of spices such as coriander powder, Sichuan peppercorn, and cumin powder, sous vide and then finished on the grill. The duck is quite tender, and I must say the marination of the duck is quite unique. 

It is not just beef on the mains menu even though beef is probably the most common meat we usually associate the Bedrock brand with. Instead, I tried the Suckling Pig (S$138 for Quarter, S$240 for Half) where the pig is seasoned with a housemade rub made with sancho pepper powder and salt. It is then slow-cooked over the fire pit for three hours, so you can expect a crispy skin and relatively tender meat. 

The main dishes also come with complimentary sauces such as Chimichurri, Apple Ketchup, Green Chilli Relish and Pommery Mustard. 

For dessert, the Lemon Pound Cake (S$13) is quite a light option to end the meal where it is first baked then grilled over the open wood-fire, which gives the edges a nice crust. 

Perhaps one of the most memorable dishes for me comes from the dessert menu and surprisingly for me, it is the Campfire Marshmallow (S$14). The skewered marshmallows are served with melted 75% Takakulum dark chocolate, feuilletine flakes, and a mini hot charcoal grill to mimic a campfire experience. 

Rants If you are still craving for a steak, the cheapest option is the Dry Aged Ribeye (S$78, 300g) which is relatively pricey for a neighborhood mall.

Will I Return Again? It is nice to see a slightly casual dining concept by Bedrock in the heartlands, and what makes Fireplace by Bedrock attractive is the nice dining ambience coupled with the good variety on its menu, even if you do not take beef.
