Food Review: Shoukouwa At One Fullerton | Two Michelin Stars For 10 Consecutive Years

The Place Not often in Singapore you will find a restaurant which has been operating for a decade, and even rarer to find a fine-dining restaurant operating for a decade with such consistency that it has maintained its 2 Michelin Stars throughout the 10 years of its operations. Shoukouwa is no stranger to the foodies seeking for a Japanese sushiya omakase meal.

Located at One Fullerton, beside its sister restaurant Saint Pierre, Shoukouwa opened in 2016 to much fanfare after having been awarded 2 Michelin Stars just months into its operations. It is an intimate eight-seater space around the chef’s table, which ensures an immersive dining experience for all. After a decade, the interiors may have seen better days, though the food takes centerstage here. One thing though, the countertop of the table is made from the highly prized hinoki cypress – which is supposed to elevate the taste profile of raw fish through its aroma.

The Food Let’s start with the obvious – a meal at Shoukouwa does not come cheap, with lunch starting at S$380 and dinner gets served from S$520 per pax. If award credentials means something to you, this is likely on everyone’s list of sushiya to try in Singapore – at least once in your life.

Shoukouwa’s Head Chef Kazumine Nishida has been running the kitchen here since 2019, having first joined the team a year earlier as its Sous Chef. Chef Nishida is a Kansai native and had previously been in various sushiya establishments including Kansai Sushi Zen and Sushi Kogetsu, before heading to Singapore to join Shoukouwa.

I visited during the restaurant’s tenth anniversary, with the Hana menu going for S$480 instead of the usual S$520. You can expect a meal here with 13 to 14 courses, where I had some of the highly sought-after fresh catch this season, flown in directly daily from the famous Tokyo’s Toyosu Market. Yes, flown in daily.

Echizengani – Snow Crab with Crab Roe Sauce

Kinki – Rockfish Soup with Seasonal Vegetables

Uni – Sea Urchin with Seasonal Jelly

Kasugo – Baby Seabream

Matsukawa Garei – Barfin Flounder

Sayori – Needlefish

Sawara – Spanish Mackerel

Botan Ebi – Botan Shrimp

Otoro – Fatty Tuna

Toro Maki – Tuna Handroll

Hotate – Hokkaido Scallop

Futomaki – Giant Roll

Mizusashi – Seasonal Fruits

Rants Expectations will be elevated with such a price point, and it will take alot to impress diners.

Will I Return Again? With its strong credentials, Shoukouwa will most definitely be amongst the top consideration for a sushiya meal on a very special occasion. Whilst a good meal, it does take a fat wallet to return to Shoukouwa regularly..
