Food Scoops: Usher Into Autumn At La Dame de Pic, Raffles Singapore | Lovely Blend Of Asian Flavours This Season
What’s Buzzing? The French fine-dining restaurant La Dame de Pic at Raffles Singapore by three-Michelin-starred French Chef Anne-Sophie Pic spots a new Autumn Menu specially curated by Chef de Cuisine Francesco Di Marzio. The new menu is a mix of the classic dishes, along with the seasonal Autumn creations.

What To Expect? A seasonal 6-course Experience Menu (S$248++) and 7-course Elegance Menu (S$338++).
For a start, the Scallop from Hokkaido, served as carpaccio glazed with mikan, tsukudani and Pike-perch roe with a mint and marigold lactic vinaigrette is lovely.

Chef Anne-Sophie Pic’s signature Berlingots return in the form of these pasta parcels filled with French cheese fondue served with a leek dashi infused with green cardamom and matcha. It’s quite the marriage of French and Japanese flavours here, and oddly refreshing.

If you go for the Elegance Menu like I did, one of the highlights for me is the The Blue Lobster from Brittany, cooked over coals and accompanied with sushi rice with sencha leaves and yuzu, and a crustacean bisque with genmaicha and Madras curry. You get a robust flavour of east and west denominated by Indian and Japanese elements. I enjoyed how curry is used subtly here in a French fine-dining concept.

Another favourite for me is the Kagoshima Wagyu Beef, marinated with laksa leaf and cooked over coals, with a side of glazed baby eggplant, black sesame, black garlic, and lemon.

For desserts, expect La Dame de Pic’s signature White Mille-feuille, comprising rose light cream, hibiscus jelly, spiked with a Tasmanian pepper emulsion.

Alternatively, there is also the Tulakalum Chocolate, a green pepper panna cotta with complementary peppermint mousse and mint chocolate ice cream; or French Conference Pear and White Tea, featuring chestnut flower honey mousse and Reine de Reinettes apple tatin, accompanied by silver needle white tea ice cream.

A curated assortment of fine cheeses (S$38++ per guest) from the artisanal trolley is also available.

In terms of beverage pairing, diners will have the option to select a harmonious wine and sake pairing or refreshing non-alcoholic beverage pairing to accompany the autumn-inspired culinary menu, available for both lunch and dinner.
