Snippets: Keyaki at Pan Pacific Singapore | A Gastronomic Discovery of Hokkaido returns
Hokkaido season is back at Keyaki, one of my favourite Japanese restaurants in Singapore.
What’s the hype: From 20 January to 26 February 2016 for lunch and dinner, Master Chef Hiroshi Ishii has curated three eight-course kaiseki presentations using the finest seasonal produce and seafood from Hokkaido. Choose from the Hokkai, Donan or Hakodate menus that start from SGD168.

The highlights: Culinary highlights include the Tuna, Botan Shrimp and Surf Clam Sashimi if you love fresh sashimi. Look out for the Grilled or Simmered Kinki Fish, one of Hokkaido’s premium specialties famous for its sweet and tender meat. Another seasonal favourite is the Grilled King Crab due to its naturally sweet meat.

I love to have hotpot during winter so here is the Ishikari Nabe (Salmon Miso Hot Pot), a delicacy traditionally served during the winter months in Hokkaido. This simmered dish comprises salmon, seasonal vegetables and Hokkaido potatoes simmered in a savoury miso broth.
