The Place Located at Marina Bay Sands, The Bird Southern Table & Bar Singapore is the first international location of Yardbird Southern Table & Bar, a renowned and award winning restaurant from the US inspired by Southern cuisine. The 190-seater two-storey restaurant spans across basement one and level one of the mall, with a more elegant and formal setting at the basement, while the top level spots an industrial chic look which I am very fond of.
My preference is definitely ground level, where the ambience is more casual and laidback, with a beautiful view of the marina and Singapore’s skyline.
The Food Think fried chicken and waffles, that’s one of the highlights at The Bird, which uses the famous 100-year-old recipe Lewellyn’s Fine Fried Chicken. The menu at the Singapore’s branch is fairly similar to Yardbird Southern Table & Bar in the US, with small tweaks to the local palate. Open from 11am to 11pm daily, The Bird offers lunch (11am to 4pm) and dinner (4pm to 11pm) daily, and a signature weekend brunch(10am to 4pm).
Some of the other Southern U.S. classic dishes at The Bird include the Shrimp ‘N’ Grits, Buttermilk Biscuits, and Butter Lettuce and Grilled Mango Salad. The drinks menu are extensive as well, with a full page cocktail menu like the Blackberry Bourbon Lemonade and The Bird’s Old Fashioned with Bacon Infused Bourbon. Lunch, dinner and weekend brunch are served at The Bird.
We started with the Deviled Eggs (S$14) and Fried Green Tomato BLT (S$18). The former has elements of smoked trout roe, dill and chive, while the latter is an addictive combination of hosyue smoked pork belly, pimento cheese and lemon vinaigrette.
The Mama’s Biscuits is a must try. The Classic Buttermilk (S$10) is made with honey butter and served with house-made jam and butter. I could practically smell the butter with every bite. This is way better than scones.
One of the main highlights at The Bird, the Chicken ‘N’ Watermelon ‘N’ Waffles (S$45) is a decently huge portion considering the high price. The chicken is brined for 27 hours to give it that moist and tender flavour, even for the breast meat, which was noteworthy for me. The waffles has elements of cheddar cheese, though that wasn’t very obvious to me. Nonetheless, I still like the waffle for its slightly crisp and aromatic flavour, good to go along with the accompanying bourbon maple syrup. The watermelon here has the effect of balancing the palate after having the chicken and waffles, and surprise surprise, these are chilled spiced watermelon!
Another classic side dish to order is the Macaroni & Cheese (S$14). This dish is a very heavy one despite the relatively small size, as the Torchio pasta here is mixed with five types of cheeses to give it the rich flavour.
From the brunch menu, the Low Country Crab Cake Benedict (S$30) is nothing like the usual I expected. The two poached eggs here are accompanied by charred lemon hollandaise sauce which the staff will pour it over the eggs, and it is topped with a long strip of smokey bacon. The lemon hollandaise sauce is an interesting element as it lends the dish a more zesty flavour as opposed to the usual hollandaise sauce.
For desserts, we had the Cafè Crème Brûlée (S$16) served with almond orange biscotti and orange gremolata. The dessert options are generally very rich, which is not really what I am looking for after a heavy meal.
Rants It comes as no surprise that prices of the food at The Bird are relatively steep, though it fits the norm if we were to compare it to the other waterfront facing restaurants in MBS such as Bread Street Kitchen.
Will I Return Again? The space at The Bird Southern Table & Bar is beautiful, with an impressive interior be it for a formal or casual dining experience. While prices are not cheap, the food is generally hearty and good. I will be back just for the classic buttermilk biscuits.
