Food Review: Waku Ghin By Tetsuya Wakuda At Marina Bay Sands | Casual Dining Experience At The Bar

The Place It was a celebratory meal, and I decided to check out the revamped two-Michelin-starred Waku Ghin by Tetsuya Wakuda in Marina Bay Sands. And if you are wondering, I didn’t go for the 10-seater Chef’s Table with the Omakase Chef’s menu which needs to be reserved way in advance. Instead, I went for the walk-in only Bar Dining which is an informal and more causal way to enjoy the Waku Ghin experience. 

The Bar Dining area spots a causal dining section, and a bar counter setting which is ideal for 2 persons. I managed to snag a table at the bar. 

The Food For the bar dining area, it offers a choice of both the Omakase Chef’s menu as well as the a la carte food menu that features Chef Tetsuya’s cuisine in the form of pastas, donburis, indulgent bar bites, and desserts from Patisserie Platine. 

For a start, I had the Toasted Sandwich of Truffle & Parma Ham (S$28). One thing to note is that portions of the dishes are generally quite small. I enjoyed this sandwich which spots a nice hint of truffle aroma. 

I was in the mood for sinful bar grubs hence the WG Fried Marinated Chicken (S$25) caught my attention. Not spectacularly unique, but definitely a good fried chicken with its moist meat. 

The dish which let me down a little is the Fried Beef Tenderloin Sandwich (S$58). In all fairness, I have not had any Beef Sando which impresses me so far, and this rendition is no exception. I was probably expecting a more buttery and crispy sandwich crust, and a more flavourful beef. 

I enjoyed the WG Beer Battered Fish and Chips (S$28). Delicious chips and crispy batter here! 

For donburi, I had the WG Grilled Wagyu Beef set on Rice (S$45) and the Salmon Caviar and Sea Urchin with Rice (S$40). 

I like the tender Wagyu beef slices for the beef rice, while the Sea Urchin option is a bowl of bliss for Uni lovers. As with the rest of the dishes, the portion is not big. 

Save space for desserts the cakes are quite good, which in my opinion impresses me more than the savoury dishes. I had the Matcha Tarte (S$11), a perfect blend of red bean, kinako almond cream and matcha chantilly. 

The Ghin Cheesecake (S$11) is lovely too. Cream cheese mousse, lemon curd and almond sponge, it is subtle and light in flavour yet delicious. 

Rants Prices are definitely on the higher end, while portions are not huge. 

Will I Return Again? A fancy bar dining option, head here for a pseudo Waku Ghin experience if you are not able to snag a table at the Chef’s Table.
