This series features the exquisite Dingley Dell Suffolk Red Pork, a family farming business based on the East Coast of Suffolk and has been around since 1999. From 13 April to 17 July 2022, the 5-Course Dinner Tasting Menu (S$168++ per person is available from Sundays to Thursday, while selected dishes on the tasting menu are available daily as à la carte specials from S$48++. The new Spring Menu at Raffles Hotel Singapore highlights ingredients like spring onion, spinach, edamame, imperial vegetables and mugwort, in a range of dishes. Available from now until 19 June 2022, cold dishes to expect include the Beancurd Skin Roll stuffed with Tuna, Tofu & Spring Onions; and the appetising Poached Sea Whelk with Chilli & Sichuan Peppercorn Dressing. For main courses, there is the Wok-fried Hokkaido Scallops & Imperial Vegetables with Grilled Green Pepper Sauce or the inventive Pan-fried Sea Cucumber stuffed with Minced Shrimps & Edamame Puree with Scallion Oil, as well as Hand-made Noodles with Braised 8-head Abalone, Goose Palm & Mullet Roe Shavings in Scallion Oil. Dim sum creations include the Steamed Mugwort Glutinous Dumplings stuffed with Water Chestnuts & Mixed Mushrooms, and the Steamed Watercress Dumplings with Prawn & Mullet Roe.

Exquisite Lobster Delicacies At Wan Hao Chinese Restaurant 
From now till 1 May, premium lobster dim sum creations, including Steamed Lobster with Sea Urchin Dumpling ($12++ for 2 pieces), Deep-fried Lobster Vermicelli Roll ($10++ for 2 pieces) and Lobster Crispy Rice Roll with Sea-urchin Sauce ($30++ per portion). For mains, expect the likes of Steamed Western Rock Lobster with Foie Gras Sauce & Asparagus ($118++ per portion, 500-550gm), which incorporates steamed lobster glazed with creamy foie gras sauce. Sen-ryo Celebrates First Anniversary With Special Dishes And New Set Lunches 
Some of the new dishes available from now till 15 May include the Kaki Soy Nabe, a hot pot good for two persons and comprises a unique Japanese soy milk-dashi base with chewy Kuzukiri noodles, tofu, vegetables, shiitake, and fresh Hyogo oysters. The set lunches are relatively value for money, with new additions like the Salmon Shioyaki Set (S$26.80) with a salt and pepper-marinated grilled Norwegian salmon paired with radish and topped with ikura. The new sen-ryo Kushiyaki Set (S$20.80) is a skewer-fan delight with five sticks of ebi, hotate, tsukune, shiitake and onion. Both sets are served with Japanese rice, chawanmushi, miso soup, salad and pickles. For a lighter option, there is the Madai Ochazuke Set (S$19.80) featuring rice topped with sliced sea bream, bonito flakes, radish and leek, along with a pot of Japanese green tea broth to pour into the bowl of rice. This set comes with chawanmushi and pickles. The new lunch sets are available from 19 April 2022 onwards, weekdays only from 11am to 3pm, excluding eve of and public holidays or special occasions.

Vegan Afternoon Tea: Sigi Skin Edition At The Lobby Lounge, InterContinental Singapore 
Available from now till 30 September 2022, The Vegan Afternoon Tea comprises a curated menu of 10 superfood-infused savouries and sweets inspired from Sigi Skin’s superfood skincare actives. Highlights from the presentation include Acai Blueberry Vegan Cheesecake, Banana Oatmeal Cake, Coffee Chocolate Crèmeux, Green Tea Tiramisu and Tropical Yuzu Custard. Savoury treats include Goji Berry Scone, Tomato Concasse with Plant-based Meatball Skewer, as well as Pumpkin Mousse, Avocado and Mushroom with Tomato Arugala in Spinach Wrap. From S$55++ per adult, inclusive of fine loose-leaf tea or coffee, unlimited ice cream and scones, with first seating from 1:00pm to 3:00pm, second seating from 3:30pm to 5:30pm.
