Food Review: NY Verden Bar And Grill At Jewel Changi | Specialty Woodfired Restaurant With 5 Different Firewood Choices
The Place Located at Jewel Changi Airport, NY Verden Bar and Grill is a new specialty woodfired restaurant and bar which offer a customisable woodfired grilling experience where 5 different firewood choices are used to cook the dishes. The restaurant is located on level three of Jewel and if you are lucky, you can score a table with a view of the waterfall. In terms of the restaurant’s interior, it is pretty open concept and contemporary.


The Food The menu is mainly segmenetd into bites, garden, seafood and meats where the dishes are meant to showcase the elements of fire through their Josper grill. Cook your own preferred cuts of meat over a choice of 5 types of firewood – Jarrah, Hickory, Oak, Cherry, and Applewood.
I started with the Bread & Dip (S$10), Italian bread served with house-made hummus seasoned with paprika and chilli paste. The hummus is not too bad, though the bread could be crispier for me.

Another appetiser I had was the Marinated Watermelon (S$20) that is topped with fried shallots and smoked ikura. There is also floss from red snapper fish floss, and this is quite a unique combination of ingredients. Personally, I find each ingredient very different from one another and the highlight for me is the smoked ikura. I am not quite a fan of the watermelon and floss combination though as it does not blend well for me.

The other starter I tried was the Smoked Beetroot Tartare & Burrata (S$28), where the beetroot is smoked over firewood while the burrata is made by an Italian cheesemaker in Singapore. This is quite a refreshing dish for me and the ingredients blend well together.

For mains, the house signature is the Crab Tagliolini (S$30) cooked in lobster broth with toppings of smoked ikura and rose petals. Lovely lobster broth here, though I would prefer the pasta to be more al dente in texture.

The other mains I had was the 72-hour sous vide Iberico Pork Jowl (S$32) which has been marinated for 48 hours with a cardamom and thyme rub for to-the-bone flavour. It is served with black garlic puree and shimeji mushrooms, and the pork jowl is tender and flavourful.

I also had the Wagyu Hanging Tender (S$50) with onion jam, marsala wine & bone marrow jus. The wagyu beef is good, though I find the price quite steep for the portions.

For dessert, I had the Flourless Chocolate Cake (S$18) made with Valrhona chocolate, mascarpone gelato and orange zest.

Rants The space and interior of the restaurant is quite open concept, though the best seats are right beside the HSBC Rain Vortex. In addition, the portions of the dishes are generally quite small too.
Will I Return Again? There is no lack of dining options in Jewel and if you are looking for a more specialised western restaurant, NY Verden Bar and Grill is one. Prices are on the higher end of the spectrum for Jewel.
