Food Review: Fool At Boon Tat Street | Modern Wine Bar Restaurant By Unlisted Collection

The Place Taking over the space of the now-defunct Cheek Bistro, Fool is a new modern wine bar dining concept by the Unlisted Collection Group and is the brainchild of Chef-Owner Rishi Naleendra and Group Beverage Manager Vinodhan Veloo. The name fool suggests not to take things seriously, and the playful vibes is evident in its interior. I was drawn to the colourful skylight ceiling and how the tables are arranged in a classy lounge-like fashion. There is also a built-in hole in most tables, cleverly designed to reveal a compartment where the wine bottle can be tucked away. 

The Food If you are solely here for food without wine, then you will not be getting the full dining experience in my opinion. For one, the wine list is a very exhaustive list of numerous pages while the food menu is merely a concise one pager. The edgy and dynamic wine list celebrates diverse artisanal and quality focused wine producers from around the world. 

Another noteworthy point is that the wine prices are designed such that it is more worthwhile to get a bottle, as the selection by glasses are very limited and simply not worth the price tag. I settled for the Kumeu River 2018 Chardonnay (S$148) as I wanted an easy to drink white wine for the night. 

For food, I started with the Chicken Liver Eclair, Date, Madeira (S$16) which comes in two pieces. I remember the chicken liver waffle from Cheek Bistro, so this is like a modified version. Rich, creamy texture of the chicken liver mousse which I really enjoyed! 

The Buttermilk Fried Quail, Sriracha Mayo (S$16) is another dish which can’t go wrong. Love that fried crispy batter here, which goes perfectly with the Sriracha Mayo sauce. 

The Dark Rye Rolls, Vegemite Butter (S$12) is not your usual bread as the rolls are glazed beautifully. It is soft and fluffy, and it is interesting to have it with the uncommon Vegemite Butter. 

For a lighter option, try the Grilled White Maitake Mushroom, Tamari, Sourdough Dashi (S$18) which will delight mushroom lovers. My favourite part is the comforting dashi broth, which I feel goes well with my wine. 

For meats, I recommend the Westholme Wagyu Hanging Tender, Potato Scallop, Leafy Greens, Fermented Soy (S$58). I conclude that there is quality assurance most of the time when I spot Westholme Beef on the menu and this is no exception. Very flavourful beef here, though I was distracted by how good the crispy potato scallop is as well. 

Rants Competent food though selection is rather limited as the focus is really the exhaustive wine list. 

Will I Return Again? Fool is a forward concept and it is a wine bar which entices ordering by the bottle instead of by the glass. It will not be a cheap dining experience for couples, and ideal for small groups to share the wine calories, and the bill.
